A new ‘collection’ arrives at the National Museum of Singapore: this time it is an Epicurean, edible experience. UK Chef-Founder Tom Sellers of Two Michelin-Star Restaurant Story will be in Singapore for a highly anticipated four-week residency in April 2022, bringing his ‘story’ to Flutes Restaurant, which is located inside the historic museum.

The food will be progressive, playful, and inspiring, with inspiration gleaned from its location.

Restaurant Story is a unique restaurant that serves an innovative tasting menu of delicate, masterful dishes inspired and led by the British seasons and the very best produce available. Tom’s dishes spell an edible story of memories visually and through smell and taste. Each dish is inspired by a moment in Tom’s life or the provenance of an ingredient.

Chef Tom Sellers has experienced a meteoric trajectory onto the international culinary scene, and yet his ‘story’ has only just begun. He skyrocketed very quickly from “rising star” to staking a claim as one of the leaders in the world of gastronomy. Tom is recognised for breaking convention and merging fine dining with forward-thinking–changing high-end dining’s stuffy culture to create an aspirational, interactive, and playful restaurant experience.

Tom says, “Freedom to travel and express yourself is precious, so we are very excited to bring the Restaurant Story experience to Singapore and value the opportunity to serve new guests.”

Tom dreamed of opening Restaurant Story at the age of 19 and was able to realise his vision in April 2013 at the age of 26. The restaurant was awarded One Michelin Star five months after its opening and received Two Michelin Stars last year. 

Paddington Bear (Foie gras, Cardamom and Marmalade) ​​​​​​​

The Singapore residency will feature signature dishes such as the Rabbit Sandwich, Paddington Bear, as well as Custard and Caviar. Tom will be joined by his core staff in Singapore. “My inspiration comes from the team I work with, the weather, the season, or the colours I see. I think the creative process is quite internal for myself, but I’d say the biggest inspiration is the people that work alongside me.

The beverage program at Restaurant Story is attentively planned with Singapore’s leading wine bar, Park90, to curate an extensive wine pairing list.

The wines will be specially handpicked to complement the progressive, playful dishes that will be served by Restaurant Story during the residency. Story’s guiding principles: be rational, focus on quality, enhance the senses and develop close ties to the vintners.
