LeVeL33, the world's highest urban microbrewery, provides a unique culinary adventure with the next episode in its "6 Shades of Grapes" series—a 6-course Riesling wine pairing supper on September 5th. This special event offers wine fans to sample the various expressions of Riesling from some of the world's most renowned wine areas, including Germany, Alsace, Australia and New Zealand. At $188++ per person, this one-night-only event promises a gourmet experience that combines the craftsmanship of Riesling with the creativity of LeVeL33's signature Contembrewery cuisine.
The event, coordinated by Executive Chef Jake Kowalewski, exemplifies the brewery's creative approach to gastronomy, which seamlessly incorporates beer and brewing byproducts into each dish. The evening begins at 7 p.m. with a welcome glass of Prinz von Hessen Rheingau Riesling Sekt Extra Trocken 2022, a German sparkling wine with bright green apple and lemon aromas.
This crisp, acidic wine pairs perfectly with a variety of starters, including Sustainable Spanner Crab Tostada, Yarra Valley Salmon Roe & Smoked Crème Fraîche Vol-au-vent, and a Seasonal Oyster with citrus salsa and pink pepper, setting the tone for the meals to come.
The second course features South Australian Kingfish Tartare topped with wild rice, organic yolk emulsion, and a ginger-chilli vinaigrette. This dish is partnered with Logan Weemala Riesling 2021 from Australia, which has subtle flavours of quince, lime blossom, and jasmine. The combination features a harmonious blend of flavours that both stimulate and please the taste.
Guests are then served a Thai-inspired Roasted Prawn Broth with poached prawns, green mango, and papaya salad. This dish pairs beautifully with the Von Hovel Saar Riesling Qualitatswein Feinherb 2021 from Germany, which has a delicious interplay of tree fruits and citrus aromas that lend complexity to the gastronomic experience.
The fourth entrée features Japanese White Corn Barley Risotto with Persian goat feta, curry fried onions and chives. This meal is paired with Neudorf Rosie's Block Moutere Dry Riesling 2021 from New Zealand, which has a crisp and bright flavour profile, with the wine's summer herb and citrus notes complimenting the creaminess of the risotto.
The fifth course, a Sustainable Yellowfin Tuna Steak coated with pepper and fennel and served atop braised cabbage, local mushrooms, and roasted fish sauce, is the evening's highlight. The dish is enhanced by the addition of Leon Beyer Riesling les ecaillers grand cru aoc 2015 from France, a wine known for its refined elegance and complexity, providing a wonderful tasting experience.
The dinner closes with a Green Apple Tarte Tatin, a dessert that wonderfully captures the evening's flavours. This dessert course, along with the Prinz von Hessen Goldstück Beerenauslese Riesling 2015, a sweet and aromatic wine from one of Germany's finest Riesling producers, is an appropriate way to end a night of gastronomic exploration.
