Rempapa is multi-cultural, serving the flavours of the Chinese, Peranakan, Eurasian, Indian and Malay kitchens. ‘Rempah’ is Malay for spice paste while ‘Papa’ honours Chef Damian’s reputation as the ‘Grandfather of heritage cuisine’.
Damian began on a culinary voyage across the landscapes of Italy and France in the late 1990s, earning a firm foundation in European food. Nonetheless, a great sense of destiny called him back to the flavours of his upbringing, which were inextricably intertwined with Singapore's cultural fabric.
Damian's culinary path evolved over two transformative decades through a series of recognised restaurants, culminating in the gastronomic refuge of Rempapa. Here, he works tirelessly to bridge generational gaps by breathing new life into traditional food and enchanting the palates and hearts of the next generation with its timeless allure.
