MO BAR at Mandarin Oriental, Singapore, introduces its latest cocktail menu, The Echoes of Singapore, a masterfully curated selection that pays homage to the city's rich history while embracing contemporary mixology. Comprising 15 innovative cocktails across five thematic chapters, this new collection celebrates Singapore’s dynamic spirit through a fusion of storytelling and craftsmanship.
Each cocktail is a reflection of Singapore’s past, present, and future, offering guests a unique way to experience the city's essence. The menu begins with Past Echoes, revisiting historical influences with drinks such as Banana Dollar, which features a banana dollar note made of rice paper, resting on a foamy blend of guava and banana liqueur. Another standout, Miss Samsui (pictured below), honours the Samsui women with a fusion of Lapsang tea, red wine-infused maraschino cherries, and delicate shochu. Meanwhile, Gao Lak, inspired by the disappearing hawker trade, combines mezcal with roasted chestnut and black bean vinegar for a bold, nostalgic flavour.
Modern Interpretations brings a fresh take on Singaporean culture, capturing the vibrancy of iconic neighbourhoods and lifestyle trends. The Haji Lane cocktail channels the street’s eclectic energy with a mix of Husk Agricole Rum, minty Branca Menta, sugarcane, and Tiger Beer. Sarapan, a tribute to the quintessential kaya toast breakfast, infuses bourbon-oak Campari with Kopi-infused vermouth and kaya-distilled gin. For those seeking a wellness-inspired creation, RE:TOX offers a refreshing mix of tequila with cucumber, celery, and green apple, reimagining the city’s health-conscious movement.
The Innovative Future chapter introduces innovative creations such as Hop 'n' Rol (pictured below), a blend of cold-distilled lager, passionfruit cordial, and Seara vodka, paired with a masala chai-dusted prawn cracker. Another standout dish, Plant-ish, showcases Hennessy VSOP and white miso vanilla in a clay pot, reflecting Singapore's sustainability objectives. Reclaimed Sling 2.0, a refined take on a classic, offers a clear rendition of the gin-based cocktail, enhanced with Cointreau and finished with a housemade lollipop.
Honouring community collaborations, Industry Community introduces drinks crafted with local businesses. The Espresso Martini-inspired cocktail, developed with bean-free coffee start-up Prefer, blends dark rum with coconut and Guinness undertones. T.Y.F, a nod to sustainability-driven bar Fura, integrates in-house oolong kombucha with bourbon and applewood. The Mandarin Martini (pictured below) offers a refreshing take on the traditional gin martini with Old Tom Gin, mandarin bitters, and Noilly Prat Dry. MO Whiskey Sour blends the hotel’s signature tea with bourbon for a silky citrus-imbued sip, while Oriental Heritage provides a luxurious experience with The Macallan 12-Year-Old Double Cask, Hennessy XO, and aromatic osmanthus, unveiled dramatically from a treasure chest.
