For those who aren’t keen on raw fish, they also offer an ‘aburi’ option to flame torch your poke at no extra charge. Otherwise, they have a chicken option that is cooked via sous vide.

Previously branded as “A Poke Theory”, Poke Theory was founded by brother-sister duo, Joey and Vannessa Lee in July 2016. The duo were just 22 and 24 years young when they opened the doors to their flagship outlet at 27 Boon Tat St, working as the only full-time staff amongst a team of part-timers. Joey, a former food editor and writer, is the number-crunching, food-munching business brain who drives the financial and operational side of the business.
Vannessa, a former content lead from Havas Media Singapore, is the creative mind conceptualising and championing the brand and customer experience in its entirety. Both siblings work on the business strategy together.
