At Firedoor the everything on the menu us freshly grilled and the chef's work intuitively with fire and the ingredients.
The kitchen is entirely powered by wood fire and everything is cooked to order. Each day the best produce available by collaborating with producers and suppliers.
At Firedoor they partner with farmers to grow bespoke vegetables and age meat such as lamb, pork, chicken and beef, and work with live fish from our fish tanks.
This allows us the freedom to only celebrate the very best ingredients of the day. If something is not available or doesn’t meet the standards of quality, it doesn’t go on the menu.
It also gives them an opportunity to showcase rare ingredients and celebrate small-scale producers.
The kitchen will burn a collection of different woods daily to create coals that will then be used to enhance the natural characteristics of the ingredients.
In this process, there is no temperature gauge with the act of cooking reduced to experience, patience and instinct, a reflection of the honesty of the food.
Get the best Australian produce from both the paddock and the soil, and cook it over an open flame.
An extremely simple concept, but one few execute with the precision and aplomb of chef Lennox Hastie, who learnt the trade at Spain’s pioneering Asador Etxebarri.
Sit at the kitchen bar and watch Hastie roast a dry-aged steak, a prawn straight from the tank or a simple potato.
Head Chef and owner, Lennox Hastie is fascinated by fire; his dedication and uncompromising approach has established Firedoor as an eating experience unlike anything else in town.
Firedoor’s wine list is composed of an abundance of mineral-driven, local and internationally sourced artisan-produced and minimal intervention wines.
The list also features a comprehensive list of brewed, fermented and distilled drinks. Lennox Hastie is fascinated by fire. He spent his early career working at Michelin Star restaurants in the UK, France and Spain.
Whilst he honed his skills in these kitchens, he began to lose sight of what he loved most about cooking, the ingredients. Video Credit: Australian Gourmet Traveller Image Credit: Firedoor Facebook Page
