New-Italian restaurant and bar Caffe Fernet is proud to announce the appointment of its new Principal Bartender, Silvio Daniele. A familiar face to Singapore’s vibrant cocktail scene, Silvio has been an integral part of Jigger & Pony Group, having first started within the company at Gibson in 2016. He then moved to Jigger & Pony, where he rose to the position of Principal Bartender, before taking on the mantle at Caffe Fernet.

Born and raised in the historical, coastal city of Napoli in the south of Italy, Silvio is no stranger to sunny weather or being by the water. With the goal of redefining daytime drinking in Singapore, the hospitable and good-humoured 28-year-old leads the charge with Caffe Fernet’s new beverage programme by marrying heritage and the classics with new ideas and innovation.

Caffe Fernet​​​​​​​

Located downtown Singapore in the Central Business District, Caffe Fernet has grown to become an icon by Marina Bay with its spectacular waterfront views and elegant new-Italian fare that is flavoursome and satisfying. The new beverage programme complements both with a robust cocktail menu that takes tipplers from breakfast to after dinner, a solid selection of Italian spirits and liqueurs, and a refreshing wine list.

Drawing on the versatility of Caffe Fernet’s location and the year-round sunny weather of Singapore, Silvio was inspired to create a programme that will suit every type of drinker. From refreshing cool-me-down tipples (or hangover cures) at noon and relaxing aperitivos before dinner to dinner cocktails and great digestivos to end the night, there’s bound to be one for diners to indulge in.

Breakfast Martini

With 17 cocktails and two punch bowls split across six time periods in a day, Caffe Fernet’s new cocktail menu is accessible and approachable in helping guests pick their drink.

“Day drinking is cool” imagines what might be served at a modern Italian cafe. The low ABV Lemon Cooler (S$20) is an easy start to the day with simple ingredients like Beefeater gin, limoncello, lemon juice, and ginger ale. There’s also the vodka-based Breakfast Martini (S$22). Soft, easy to drink and reminiscent of marmalade on toast, it’s made with clarified milk and English breakfast tea, delivering a fragrant whiff with every sip.

A nod to the afternoon, the time to “Clear my schedule”, Silvio pays homage to Italy’s love of coffee and cocktails with the Cold Brew Irish Coffee (S$23). This smooth and rich tipple with Tullamore Dew Irish Whiskey and Monkey Shoulder Smokey
Monkey Whisky is one to have as a midday perk-me-up.

Sgroppino

Or enjoy the refreshing Sgroppino (S$25), an addictive concoction made with Monkey 47 Gin and Dopa Dopa lemon sorbet, topped off with prosecco and a rosemary sprig - perfect as a palate cleanser after a savoury lunch, or simply to beat the afternoon heat.

Caffe Fernet is not complete without the classic Aperol Spritz (S$20), because “It’s always 5pm in Italy”. They have renewed the aperitivo with a local twist, featuring Singapore’s Brass Lion Gin with Aperol, prosecco and soda. When the clock strikes “Cocktail Hour”, wind down with the slushy-style Raspberry Margarita (S$22), which is also available as a pitcher at S$88 for sharing.

As the night grows long, consumers looking for “One for the road” can try Caffe Fernet’s Hazelnut Manhattan (S$25). Greeting one’s palate in flavourful layers from Maker's Mark 46 Bourbon Whisky and hazelnut liqueur, this boozy number is served with 80% dark chocolate from Fossa Chocolate. Rich, smooth, and warming with the fragrance of hazelnut, enjoy the chocolate between sips for an elevated mouthfeel.

Hazelnut Manhattan

In other ways, the essence of Italy can be found on the spirits list. Caffe Fernet is armed with a strong selection of Amaro and Fernet - bittersweet herbal liqueurs commonly consumed in Italy after dinner to aid digestion. Highlights include Averna Don Salvatore (S$18) from Sicily with the distinct flavour for pure cola and Braulio (S$16) with 13 botanicals and aged two years in Slovenian oak.

A new selection of liqueurs, fortified wines and grappa are also available on the menu, introducing lesser known labels such as Mirto Silvio Carta (S$16), a savoury Sardinian liqueur made with myrtle and Mazzetti 7.0 (S$23), a complex and powerful 100% cru Grappa di Ruche.

Aperol Spritz

For wine lovers, a curated collection of sparkling, rosé, white and red wines await. Handily profiled into approachable sections for easy selection, diners can pick from “Bright & Zesty” or “Round & Full-Bodied” white wines and red wines that are “Perfect with Food” or “Rich & Expressive” for a nightcap.

Caffe Fernet’s new beverage menu is now available. Happy Hour runs daily from opening till 6.30pm with special pricing on selected cocktails, wines by the glass, and Pilsner Urquell beer buckets.
