Bedrock’s new Coastal Location Bedrock Origin is an Evolution in Primal Dining where Land meets Sea

Bedrock’s new coastal location is an evolution in primal dining where land meets sea. I’ve been fortunate enough to dine at home-grown steakhouse success story, Bedrock Bar & Grill and it is easily on my recommendation list as one of the best steakhouses in Singapore.

Fans of Bedrock can certainly rejoice as there is a new addition in town, Bedrock Origin, situated at the coastal Oasia Resort Sentosa. Bedrock is evolving its primal dining origins which focus on natural food from the earth into an experience where land and sea come together.

Entering the brand new establishment, we are shown around an intimate arched cellar and dry aging cabinet space which as you would expect contains a variety of high end beef cuts – from the classic Wagyu to the impressive Tomahawk. What we didn’t expect was a cabinet dedicated to dry aging seafood – a marvellous and impressive display of whole Turbots, Snappers and weighty Barramundi tails.

Palates at the ready we are shown into the bright and airy art deco inspired space, reflective of its coastal locale and quite different from the original Bedrock ambience. There’s even a welcoming breezy terrace for those al fresco lunches or evening aperitifs.

Comfortably seated we are greeted with a delicate Raspberry Daisy cocktail – a refreshing and fruity combination of CÎROC Vodka, fresh raspberries and fresh lemon juice. This pairs delightfully with our first course – a tantalisingly light Kingfish Sashimi where bursts of crispy brown rice puffs contrast with the smooth, succulent fish drizzled in wasabi and ceviche soy dressing.

Our highlight of the meal came in the form of the Aged Kühlbarra Barramundi Tail – this very generously sized tail which is dry-aged for seven days to enhance its taste has perfectly crispy skin and the most juicy succulent flesh. The flavours are simply divine and well beyond a typical Barramundi experience.

True to its origins, Bedrock Origin delivers a perfectly executed steak experience – in our case a Dry-Aged Australian Barley-Fed Bone-In Striploin served with its signature red wine sauce and accompanied by some simply outstanding Spicy Brussel Sprouts (finished off on the applewood fire grill for added smokiness) and the famous Bedrock Mac n Cheese.

Away from the city, Bedrock Origin settles in at its new home on an island in the sun, embracing a lighter, brighter, fresher take on the Bedrock classics. The new address is the perfect getaway for social corporate lunches, romantic dinners and weekend soirees with family and friends.

Dessert is an indulgent Palm Torte where a gula melaka chiffon cake is served with walnut streusel, mascarpone cream cheese, carrot-orange marmalade, fresh figs and garnished with mint leaves.

Bedrock Origin is easily worth the trip over to Sentosa for an upscale lunch or dinner where you can be assured of tried and true classics from the original Bedrock Bar & Grill elevated with a range of original and enticing seafood menu items.
