The Fresh Fish Station, located at the heart of the "Tidal Treasures!" Seafood Festival, allows guests to choose their fish and have it chargrilled or steamed. The fish can be served with a variety of sauces, such as Green Thai Chilli, Sambal Onion, Szechuan Mala, Spicy Tomato, or Tarragon Lemon Butter, for a savoury start to the meal.

The festival menu features unique dishes like Giant Stingray with Sambal and Urban Farm Calamansi, which are only available on weekends. Other standouts include Herb-stuffed Giant Barramundi with Tarragon Cream Sauce, Sustainable Seabass with Spicy Tomato Sauce, and the perennially popular Chinese Pumpkin Broth Rock Lobster. Other options include Garlic and Chye Poh Mantis Shrimp, Scandinavian Fishermen's Stew, Fiskesuppe-style Baked Oyster, Southeast Asian Crispy Lychee Prawn Ball and Crispy Vietnamese Prawn Spring Roll.

For meat aficionados, the festival does not disappoint. Hunan Lamb Ribs with Cumin and Chilli and Black Angus Prime Ribs with Truffle Sauce are among the available options. These dishes complement the seafood choices and cater to all palates.

Peppermint's buffet also includes Seafood Island, a large display of fresh seafood on ice, such as oysters, scallops, crabs, and prawns. At the Japanese Station, customers can sample a variety of sashimi and seasonal sushi. The Salad Bar also serves a range of crisp greens, dressings, freshly baked bread and soup options, ensuring a well-rounded meal experience.

To end on a sweet note, the dessert section offers Burnt Cheesecake, Fried Durian Ball, Mango Panna Cotta, Chocolate Royaltine, Green Tea Red Bean Swiss Roll, Cheng Teng, and a variety of ice creams. These desserts provide an ideal finale to a delicious meal.

The "Tidal Treasures!" Seafood Festival in Peppermint runs at varied hours and costs.​​​​​​​

Weekday meals, offered Monday through Friday (excluding public holidays) from 12:00 pm to 2:30 pm, cost SGD72++ per adult and SGD36++ per child (6 to 12 years old).

Weekday dinners are priced at SGD98++ per adult and SGD49++ per child (6 to 12 years old) and are served from 6:30 p.m. to 10:00 p.m. Monday through Thursday (except the eve and public holidays).

Weekend lunches are available on Saturdays, Sundays, and public holidays from 12:00 pm to 3:00 pm and cost SGD82++ per adult and SGD41++ per child (6 to 12 years old).

Weekend dinners are priced at SGD112++ per adult and SGD56++ per child (6 to 12 years old) and are available from Friday to Sunday, including the eve of public holidays, from 6:30 pm to 10:00 pm.

Peppermint at PARKROYAL COLLECTION Marina Bay Singapore proudly presents the unique and exciting Tidal Treasures Seafood Festival from 7 June to 7 July, 2024. This Festival is a sea of culinary delights curated by Chef de Cuisine Leon Yee and his culinary team, promising a dining experience like no other.

As a seafood lover, I eagerly looked forward to my night out. The evening began on the Urban Farm terrace at the Fresh Fish Station, where the chefs had prepared a large BBQ pit. You could choose which fish you wanted from the selection of baby pomfret, leather jacket, patin fish (a type of catfish), and Kembong (mackerel). Various sauces, including green Thai chilli, sambal onion, Szechuan mala, spicy tomato, and tarragon lemon butter, complemented each fish. The smoky charcoal flavours from the BBQ added a delightful depth to the fish, making it a standout dish for me.

Inside the main buffet spread, many more delicious offerings awaited. The Stingray with Sambal, a local hawker centre classic, was done exceptionally well. The sambal was spicy, sweet, and begging to be devoured. Another highlight was the Herb-stuffed Giant Barramundi with Tarragon Cream Sauce. Usually, barramundi is so big that you don't see the whole fish often, but there are no problems here at the Peppermint. This dish featured three giant barramundi, cooked to perfection, and was a crowd favourite as each fish quickly disappeared from the buffet.

I also tried something I've never had before: Chinese Pumpkin Broth with Rock Lobster, which featured lobster halves in a thick pumpkin broth. The flavour combination worked beautifully, and a second serving confirmed its deliciousness. Next on my plate was the Scandinavian Fishermen's Stew, packed with lobster, mussels, prawns, scallops, squid, and fish. This glorious Stew, ideally suited for a winter's day, had extra chunky prawns and a tangy seafood sauce perfect for dipping bread.

While I usually enjoy my oysters au naturel, I treated myself to the Baked Oysters with cheesy mornay sauce. These briny morsels were so delicious that I couldn't stop at just one, and thankfully, one of the chefs was on baked oyster duty that evening. The buffet featured two soups: a Herbal Clam Broth and a rich, thick, luscious Lobster Bisque. Don't miss the lobster bisque – the flavour is a knock-out punch. With so much lobster served at the restaurant, I'm guessing there is an abundance of lobster shells to create this masterpiece bisque.

Are you not tempted by the bounty of the seas? No worries, as meat lovers had a wide selection of meats, including Hunan Lamb Ribs with Cumin Chili and Black Angus Prime Ribs served with Truffle Sauce. The lamb was sticky and fall-off-the-bone tender, while the prime ribs were deliciously served medium rare, making for a perfect roast beef sandwich.

Peppermint's buffet didn't confine itself to just the seafood theme. The regular evening buffet included a seafood station boasting fresh oysters, lobsters, crab legs, and mussels, a complete sushi and sashimi station, a pasta station, cuisines from Japan and India, local fare such as roasted meats and cheeses, and a salad bar offering crisp greens with a variety of other salad vegetables and dressings alongside freshly baked bread.​​​​​​​

Dessert lovers were not disappointed, with an impressive selection of colourful and addictive Peranakan Kueh and tortes. The ever-present Durian Cream took pride of place at the dessert bar, and the signature Cucumber Sorbet is a must-try.

The exceptional service provided by our servers, Riley and Camilla, made the evening truly memorable. Their attentive care and engaging conversation added a personal touch that enhanced our dining experience.

Overall, Peppermint's Tidal Treasures promotion is a delightful seafood feast that caters to a wide range of palates. The restaurant's Halal certification ensures everyone can partake in this gastronomic journey, and the buffet offerings won't leave anyone disappointed
