Savour the explosion of taste with the Red Curry Sugar Cane Prawn and the aromatic Thai Garlic Prawn with Basil. Delight your senses with their Steamed Squid, drizzled in a zesty Kaffir Lime Garlic Chili Dressing and the delectable Stir-fried Squid with Salted Egg.

But that's not all! Brace yourself for the captivating flavours of their Gaeng (Thai Curry) Station. Be enthralled by the rich and complex Gaeng Massaman Neua (Black Angus Beef Oxtail), the vibrant and aromatic Kaeng Khiao Wan (Green Curry Chicken), and the divine Kaeng Phed Ped Yang (Red Curry Roast Duck).

Take a detour to the Noodle Station, and indulge in their Thai Beef Kway Chap and the Braised Duck Rice Noodle. The Jumbo Tom Yum Seafood Tower is another must-try. This Instagram-worthy dish features a tower of perfectly cooked shrimp, squid, mussels, and more, in a spicy, tangy tom yum broth. Not forgetting the perennial favourite, Khao Mun Gai (Poached Chicken, served with Fragrant Jasmine Rice, cooked with Pandan and Ginger from their very own Urban Farm).

Are you ready for a culinary adventure that will transport your taste buds to the vibrant streets of Thailand? Look no further than Peppermint at PARKROYAL COLLECTION Marina Bay, Singapore, where they present the highly anticipated "Tantalising Thai" all-you-can-eat buffet experience. I recently visited Peppermint for the gastronomic Thai buffet; I am happy to share my delightful experience with you.

Walking into the Peppermint, you are immediately welcomed by the vibrant aromas of Thai spices, beckoning me to explore the mouth-watering dishes Chef de Cuisine Leon Yee and his talented culinary team prepared. As I have previously experienced Chef Leon’s themed buffets, I was eager to hit the buffet that showcased an array of authentic Thai delights that would make any Thai food lover weak in the knees.

Let's dive right into Peppermint's tantalising array of authentic Thai dishes. The Wok-fried Yellow Curry Crab Meat was a true showstopper, with its succulent crab meat bathed in a rich and aromatic curry sauce. If you’ve had Yellow Crab Curry before, this is reminiscent of the old-time Thai favourite. A definite taste of curry powder, but the crab flavour lingers after the first mouthful.

Next was the Gaeng (Thai Curry) Station, where I was introduced to the Gaeng Massaman Neua (Black Angus Beef Oxtail). Completely new to me and was a rich and complex curry that showcased the chef's culinary mastery. This was easy to eat and melt-in-the-mouth tender,..and what a chilli hit!

The Kaeng Khiao Wan (Green Curry Chicken) delighted my senses with its vibrant and aromatic profile. Whole tender chicken drumsticks bathed in a rich tantalising green curry. As far as green curries go, this one is up there with the best I’ve had.

Now, the Pad Thai, the ubiquitous street food you’ll see freshly cooked in food carts that pop up on street curbs in Bangkok at dusk. This version was fantastic. Soft noodles, a healthy kick of chilli, bean sprouts and seafood. The usual condiments f crushed peanut, chilli flakes, sugar and fish sauce were on hand to temper the robust flavours of the Pad Thai.

The Thai Garlic Prawn with Basil was another mouth-watering dish on the menu. The prawns were cooked to perfection, still so succulent and juicy, while the vibrant flavours of the luscious dark danced on my palate.

But the star of the night was the Jumbo Tom Yum Seafood Tower. A masterpiece of perfectly cooked prawn, lobster claw, conch, mussels, and more, swimming in a spicy and tangy tom yum broth.  The flavours were vibrant and bold, and the seafood was fresh and succulent. Though the broth differed from the usual fiery red Tom Yums I've tasted before, it still packed a punch and transported me to the streets of Thailand.

To complete my culinary journey, I indulged in Thai must-try desserts. The Red Ruby in Pandan Syrup was a refreshing treat, while the Steamed Pumpkin and Custard had a velvety texture that melted in my mouth. And to end the evening on a refreshing note, I savoured their famous Peppermint Cucumber Sorbet, a perfect palate cleanser.

By the way, while this month’s cuisine promotion at the Peppermint features Thai, the usual buffet that features daily at the Peppermint continues. Lose yourself in the ice bed of fresh seafood, including lobster halves, oysters and the freshest, crunchiest prawns. The other favourites are the Japanese station with sliced-to-order sashimi, the Indian station and the famous dal, and the enormous salad bar featuring a wheel of Parmesan cheese.
