Shangri-La Singapore's Origin Grill and Origin Bar have revealed a dynamic new menu and cocktail concept that promises to transform culinary and mixology experiences. Origin Grill's new offerings, led by recently recruited Chef de Cuisine Simon Bell, honour the art of grilling with a Josper Grill, focusing on high-quality ingredients and powerful flavours. Concurrently, Origin Bar debuts "INFINITY," a collection of 18 creative cocktails, each a testimony to inventive craftsmanship.

At Origin Grill, customers can enjoy a symphony of bold flavours. The menu opens with Grilled Tiger Prawns, which are char-grilled to perfection and served with a creamy coconut curry enhanced by fried curry leaves, chilli sesame oil, and spring onions, all served over aromatic wild rice. Another winner is the Australian Bay Lobster, a delicious slipper lobster roasted until soft and served with a Waldorf-inspired salad and luscious beurre noisette.

Josper Grill

The Josper Charcoal Grills department offers a variety of premium steaks, including the W.Black Full Blood Wagyu and Stone Axe Full Blood Wagyu, both sourced from New South Wales in Australia. These cuts, famed for their rich flavour and marbling, are grilled at high temperatures to provide a charred finish that enhances their natural flavour. The menu also includes a delicious and luscious Tender Valley Black Angus T-Bone steak, along with a tasty baked rice dish and charred carrots.

Crispy Pork Belly

For mains, the Crispy Pork Belly stands out, prepared with an 8-hour salt scoring and a 12-hour confit, resulting in crispy skin and delicious flesh finished on the Josper Grill. Cameron Highlands' Grilled Pumpkin exemplifies Chef Simon's commitment to tradition and patience, yielding a deep, rich flavour enhanced with macadamia cream and brown butter sauce. The Kinross Station Lamb Rack is grilled to perfection and features delicate and succulent meat complemented by burned cauliflower puree and a brilliant green sauce.

Australian Bay Lobster

Seafood enthusiasts will enjoy the Pan-Seared Barramundi from North Queensland, Australia. This meal has a buttery sweet flavour and is served with charred aubergine simmered in tomato puree and a pumpkin seed gremolata, resulting in a balanced blend of flavours. Autumn Chin, the pastry chef, creates desserts like the Gingerbread Soufflé, which is laced with ginger, cinnamon, and mandarin marmalade and topped with a cool brown bread gelato.

Origin Bar matches Origin Grill's culinary breakthroughs with its new cocktail concept, "INFINITY." "INFINITY" offers 18 cocktails created by a creative team of bartenders led by Beverage and Bar Manager Adam Bursik, who draws inspiration from a variety of cultural influences and inventive approaches. Highlights include "FAQ Plastic," a sustainable cocktail produced from tofu waste and oxidised wine, and "Ma To Ma To," a complicated blend of distilled ketchup, Worcestershire sauce, green tomato cordial, and mezcal.

The cocktail experience at Origin Bar is further improved by Chef Simon Bell's new bar nibbles menu, which embraces a 'fingers or chopsticks only' philosophy. Guests can eat small plates and shareable snacks including Beef Hash, Bap Xao snacks, Super Jerky, and Fried Gelato in a lively and engaging eating experience.
