LeVeL33, known as the world's tallest urban microbrewery, is pleased to announce the second installment of its "6 Shades of Grapes" series: a 6-course pinot noir wine matching meal. This special supper event will take place on June 19 and 20 at 7 p.m. and will cost $188++. It promises a refined culinary experience that highlights the versatility of the pinot noir grape varietal, ranging from sparkling champagnes to deep Burgundy wines.

Executive Chef Jake Kowalewski has thoughtfully selected the event's food, which reflects LeVeL33's revolutionary Contembrewery culinary approach. This distinctive style incorporates beer and brewery by-products into the dishes, boosting flavours and providing a different dining experience. Each of the six courses is expertly paired with a carefully selected pinot noir, ensuring that the wines and food complement one another flawlessly.

The evening starts with an outstanding match of Bollinger PN AYC 18 Blanc de Noirs Brut from France, one of the most prestigious champagne houses, and a delicate Hokkaido Scallop. This first meal sets a high bar for the rest of the evening, blending the deep depth of the champagne with the fresh, subtle flavours of the scallop.

The second meal includes Salt Baked Beetroot with celeriac remoulade, spent grain focaccia, and a raspberry LeVeL33 Blond Lager vinaigrette garnished with sorrel. This meal pairs nicely with Pascal Jolivet Sancerre Rouge France 2021, an elegant pinot noir with bright notes of cherry, raspberry, and strawberry.

The third course will feature Westholme Wagyu Tataki paired with Kimura Cellars Pinot Noir New Zealand 2021. This wine has a lively acidity and mild notes of cinnamon and clove, which complement the flavours of the soft Wagyu steak.

The fourth course features a Local Mushroom Spent Grain Tart, which is matched with Bodega Chacra Barda Pinot Noir Argentina 2021. The wine's flowery and fruity overtones enhance the earthy flavours of the mushrooms, resulting in a beautiful match.

Next, the In-house Dry Aged Duck Breast is matched with Domaine Michel Noellat Bourgogne Pinot Noir 2021 from France. This medium-bodied Burgundy wine, famed for its smooth texture, goes perfectly with the rich, savoury duck breast.

The supper closes with a delectable Valrhona Dark Chocolate Torte, served with pinot noir ganache and pinot-poached fruit. This last course is matched with Hahn Founder's Pinot Noir USA 2021, a lovely Californian pinot noir known for its lengthy and delicate finish, making for an ideal conclusion to a remarkable culinary adventure.
