This Chinese New Year, Jidai introduces a thoughtfully curated and reunion set menu. Famed for his manifestation of modern French-Japanese fare, Chef-Owner Darwin Wong once again showcases his culinary dexterity with his series of perfectly synthesized Chinese New Year dishes injected with French flair.
Diners can look forward to a slew of unique dishes prepared specially for the Lunar New Year, signifying prosperity, abundance, and auspiciousness.
Set Menu for 3-4 Pax ($238++)
A vibrant centrepiece dish at Chinese New Year gatherings and a quintessential festive must-have, kickstart the auspicious celebrations with the Black Truffle Nori Pen Cai. The casserole pot is brimmed with premium ingredients such as abalone, fish maw and Chinese mushroom and is braised to perfection in Chef Darwin’s house-made stock. The staple dish also boasts a refreshing French twist – dusted with black truffle and nori for that additional touch of indulgence.
Next, devour the Eight Treasure Basmati Rice in Lotus Leaf. Breathing new life into the traditional Cantonese dish, Basmati rice is used instead of normal glutinous rice for its distinct fragrance together with its light and fluffy bite. The delicacy also features chunks of French deep-sea crab and chestnut, promising satisfaction with every morsel.
To round up the festive set, help yourself to the fibre varietal – Charred Broccolini with Sesame Dressing and Roasted Almond.
Golden Black Truffle Chicken ($68++)
This Lunar New Year of the Rabbit, ditch the conventional roasted meats and herald the new year with Chef-Owner Darwin’s illustrious brainchild – the Golden Black Truffle Chicken.
An unprecedented creation, this dish pleases all the senses. No effort is spared in the laborious preparation - The prized bird is handpicked by Darwin and his team to ensure the right amount of fat-to-meat ratio and then stuffed with a slew of lavish ingredients – glutinous rice, foie gras, truffle, lard, chicken jus, promising a rhapsody of flavours.
The creation is then presented on a rack over a bed of aromatics, which will be blazed and charred to perfection, promising a feast for both the eyes and palate. The pleasure continues as you sink your teeth into the poultry – be greeted by crispy and smoky chicken skin, which then sets the centre stage for the protagonist - a princely slab of foie gras.
Flaunting ribbons of luscious, buttery fat from the goose liver complemented with tender chicken flesh and glutinous rice, each bite dissolves into smithereens of umami bliss that will leave you lusting for more.
Running the gamut of luxury and prosperity, the ethereal creation is also studded with real 24k gold flakes.
