Enjoy vibrant multi-ethnic flavours that pay homage to Singaporean cuisine spotlighting the use of sustainable ingredients and fresh produce from local farms from the Malay, Indian, Chinese, and Middle Eastern cuisines.
Begin the hearty feast with quintessential local delights prepared à la minute such as the popiah, wrapped with generous fillings of savoury turnip and sustainable prawns, or dive into the tasty blend of “Rojak” featuring a diverse combination of sweet, sour, and spicy flavours. Don’t miss out on the Gado-Gado, which is an appetizing mix of rice cakes, cage-free eggs, and vegetables bathed in rich peanut sauce.
The Chinese live kitchen features a repertoire of classic local dishes reminiscent of the best-loved staples in Singapore’s hawker fare. This includes the delicious and indulgent wok-fried carrot cake and char kway teow, both with the use of sustainable tiger prawns. The selections also include succulent seafood such as the wok-fried salted egg yolk mud-crab, Singapore-style chilli mud crab, and steamed snapper, sourced directly from local farms, and doused with flavourful black bean sauce.
Work your way through a tempting selection of barbequed meats such as the ikan bakar sambal, a spicy barramundi from our local farms that is fired up with rich homemade chilli paste and wrapped in fragrant banana leaf. Grab a serving of the kambing bakar, a roasted juicy Australian lamb leg rubbed with tangy and spicy flavours of chilli, shrimp paste, and pineapple juice. Include a side of the crowd-favourite otah- otah and pair these dishes with a serving of steamed organic jasmine rice.
In the Malay live kitchens, keep eyes peeled for added themed specials such as the sambal sotong, or the ikan goreng belachan, a barramundi fried with aromatic local spices and dried shrimp, both with the use of the restaurant’s certified sustainable seafood. Situated close by is the Indian live station dishing up deliciously charred tandoori-style meats.
Highlights include the tandoori crabmeat kebab, tandoori lamb kebab roasted with a host of herbs and spices, and an elaborate array of Indian curries best paired with naan or choices of prata.
Sweeten the celebration at the sight of a tantalizing ensemble of nostalgic local desserts. Start with a host of Peranakan treats, such as the ondeh-ondeh, kueh dadar, or kueh lupis, as well as refreshing bowls of ice-kachang and chendol laced with generous ingredients. The soft-serve ice cream is a must-try for all sweet-toothed with choices of coconut or durian flavours specially available for the occasion.
Pair the ice cream with a winning combination of freshly prepared warm banana fritters or fried durian balls for an irresistible treat.
The national day buffet is available exclusively on the 8 and 9 August 2022 for lunch (12:00 p.m. to 2:00 p.m.), dinner (6:30 p.m. to 9:30 p.m.), and afternoon tea (3:00 p.m. to 4:30 p.m). Lunch and dinner buffet is available at SGS 88 and afternoon tea is available at SGD 50.
Children aged 4 to 12 years old can enjoy the buffets at SGD 45 and SGD 25 respectively. Complete the indulgences with free flow of freshly squeezed orange juice, chilled juices, and local beverages such as Bandung, Teh Tarik, Teh Halia, and Kopi Tarik.
