Torno Subito Singapore Celebrates One Year with Exclusive Culinary Experiences

Torno Subito, the dynamic Italian dining establishment by renowned chef Massimo Bottura, is commemorating its first anniversary in Singapore with a lineup of specially curated culinary experiences. Bottura, the visionary behind the three-Michelin-starred Osteria Francescana in Modena, has long been celebrated for blending classic Italian gastronomy with contemporary flair. At Torno Subito, this philosophy comes to life through a menu that pays homage to the rich culinary heritage of Italy’s Emilia-Romagna region while embracing playful innovation.

This March, the celebrations promise an exciting gastronomic journey, headlined by ‘CIAO Massimo!’—a four-day residency featuring Bottura himself. Additionally, the restaurant introduces ‘Friends of Torno Subito’, a four-hands dining series bringing together global culinary talents, and ‘AperiTorno’, a vibrant take on Italy’s aperitivo tradition, offering an exquisite selection of cocktails and light bites.

From 4 to 7 March, Massimo Bottura takes center stage at Torno Subito Singapore, presenting diners with an exclusive tasting menu that encapsulates his signature creativity. The lunch experience, running from 5 to 7 March, features five courses, including ‘Cotechino e Lenticchie’, a contemporary take on Modena’s renowned sausage and lentil dish, and ‘Modena Ribs’, a balsamic-glazed delight inspired by the colorful artistry of Damien Hirst.

Meanwhile, the seven-course dinner menu, available from 4 to 6 March, showcases Bottura’s inventive approach to Italian cuisine with highlights such as ‘I Love Pizza’—his unique rendition of Marinara pizza—and ‘Maialino’, a Porchetta-style roasted suckling pig complemented by apple compote and Swiss chard. Each dish is a testament to Bottura’s ability to transform tradition into an avant-garde dining experience.

Expanding its culinary horizons, Torno Subito launches ‘Friends of Torno Subito’, a collaborative dining series uniting the restaurant’s playful Italian essence with diverse global influences. The inaugural edition, set for 14 and 15 March, features a partnership with Gucci Osteria Seoul da Massimo Bottura, a concept that merges the sophistication of Italian cuisine with Korean culinary artistry.

Led by executive chef Hyungkyu Jun, this collaboration results in a meticulously crafted menu where dishes such as ‘Nerano’, a delicate chitarra pasta infused with Provolone del Monaco, lemon, and zucchini, meet Gucci Osteria Seoul’s ‘Sentiero di Mt. Halla’, a Jeju sirloin pork creation enhanced with chamnamul pesto. The dinner menu further elevates the experience with standout dishes such as ‘Merluzzo Alla Ligure’, a seared cod dish accented with green olives and rosemary crumble, and the refined ‘Abalone’, featuring slow-cooked abalone and anchovy-infused butter sauce pasta.

The series continues in May with a collaboration between Torno Subito and chef Henrique Sá Pessoa of Alma, a two-Michelin-starred Portuguese establishment, promising a fusion of Portuguese and Italian flavours.

The celebrations culminate with ‘AperiTorno’, an invitation to embrace Italy’s beloved aperitivo tradition. Beginning 19 March, guests can unwind with an innovative selection of cocktails inspired by Italy’s coastal landscapes. Among the standout creations is Nel Blu Dipinto di Blu, a citrus-infused concoction blending Dewar’s 15-Year-Old Scotch Whisky with tomato, basil, and grapefruit, capturing the essence of the Amalfi Coast.

Equally enticing is the Pesto Sour, a fragrant mix of jasmine and olive oil-infused Grey Goose Vodka, lemon, and basil, evoking the scenic beauty of Portofino, Cinque Terre, and Sanremo. These signature cocktails, available at a special price of $15++ from 5:30pm to 7:30pm on Wednesdays to Fridays, are served alongside complimentary bar snacks, making for an irresistible aperitivo experience.
