From April, Hilton Singapore Orchard's Ginger.Lily unveils its latest creation, "Synaesthesia," curated by Head Mixologist Michael Mendoza. This innovative cocktail adventure blends classic techniques with modern flair, offering an immersive journey through taste, sight, touch, smell, and sound. As part of the bar's "Experience" menu, "Synaesthesia" joins a collection of unique concoctions, including favourites like "A New You" and "Zero Proof."

Each cocktail in "Synaesthesia" is a masterpiece, precisely prepared to harmonise flavours, colours, and aromas, ensuring an amazing experience. Head Mixologist Mike's drive to innovation is evident as he introduces fresh, house-made ingredients, inviting guests to savour the extraordinary.

Fire and Ice & Luminous Insight

"Sight - Luminous Insight" is a visual and delicious pleasure, with visitors able to pick between sweet or spicy notes while wearing red and yellow-tinted spectacles. "Touch - Fire & Ice" entices with a combination of warmth and chill, while "Hear - Sonic Synthesis" takes drinkers to a peaceful forest with wireless neckband speakers that play woodland sounds.

Aroma Alchemy & Scented Spirits

"Aroma Alchemy and Scented Spirits" stimulates the olfactory senses with well-chosen food scents that enhance earthy and sour notes. Meanwhile, "Taste - Umami Elixir" promises a liquid banquet of unusual and savoury flavours. In addition to "Synaesthesia," Ginger.Lily serves updated classics and refined mocktails under the name "Zero-Proof." Guests can enjoy Nikkei-style bar bites that draw inspiration from Japanese and Peruvian culinary traditions.​​​​​​​

If you're up for a fancy and unforgettable experience that exploits all your senses, look no further than Ginger. Lily's latest cocktail menu – "Synaesthesia". My night out at the bar on the fifth floor of the Hilton Orchard Hotel was a unique cocktail experience. Seriously, this is a must-try bar!

Now, hold on. "Synaesthesia"? What's that? It's a fantastic concept that means experiencing one sense through another. Think of seeing sounds or tasting colours. Far out, right? That's precisely the kind of journey Mike Mendoza, the bar's seasoned Head Mixologist, has designed with this innovative menu. Mike's inspiration for "Synaesthesia" draws on Orchard Road's vibrant history as a thriving fruit plantation. He's not just throwing together sugary concoctions here. This menu is the fruits of Mike's labour, bursting with fresh, house-made ingredients and unique fruit distillates, bespoke garnishes, you name it. They even have their own lab with mind-bending equipment, like sonic mixers that use soundwaves to create mind-blowing flavour combinations!

So, take a deep breath, put seat belts on and get ready for a cocktail ride and a half. Get ready to ditch the expectations of a typical night out because "Synaesthesia" is an immersive adventure unlike any other. Six handcrafted cocktails, each designed to tantalise your taste buds, awaken new sensations, and leave you saying, "Wow!"

Let's take a peek behind the curtain at these enticing elixirs:

Light – Luminous Insight: This No.3 Dry Gin concoction is more than just a drink; it's an interactive spectacle! This playful cocktail allows you to be the master of your taste destiny. Here's how it works: you get a sweet or spicy option, but the real magic happens when you throw on a pair of specially tinted glasses. Red lets you bask in the sweeter notes of vanilla and fruit, while yellow highlights the kick of Ginger. Is your taste buds changing, or is the colour playing tricks on your mind? I needed a second round to confirm my suspicions. You'll have to try it yourself to find out!

Touch – Fire & Ice: Don't let the classic Americano coffee look fool you. This drink is a delightful surprise waiting to explode in your mouth. This beverage packs a punch with a blend of Razel's Peanut Butter Rum and Gula Melaka Espresso. A generous dollop of cold, velvety Mascarpone Cheese Espuma (think fancy whipped cream) adds a touch of luxury and surprise. A sprinkling of grated parmesan cheese adds a delightful savoury note. Who knew peanut butter, coffee, and cheese could be a magical culinary combination?

Let your ears feast on Hear - Sonic Synthesis as you sip on a tropical elixir crafted with Big Kahuna Gin and fresh-pressed juices of apple, pineapple, and arugula. With provided wireless neckband speakers playing calming sounds of nature, it's the ultimate sensory retreat, a perfect antidote to the hustle and bustle of city life. Mike made it easy for me by choosing calming music with the sound of the beach to immerse myself in tranquility with this tropical elixir. It is a refreshing drink, and you should order it first when you get to the bar after escaping the local humidity.

Smell - Aroma Alchemy and Scented Spirits: Two cocktails enhanced by Ginger. Lily's carefully paired edible organic perfumes evoke earthy notes and surprising tartness. Aroma Alchemy presents a blend of house-made beetroot distillate and tropical fruits, complemented by the striking acidity of vinegar cider. Did you ever see beetroot in

your cocktail? Scented Spirits offers a captivating bouquet of honeysuckle and jasmine from bamboo-aged Riesling made in-house. Bamboo aging is like barrel aging but in bamboo segments, specially made for the Ginger.Lily bar. These would make a fabulous present for someone. Get your bamboo ager, top it up with Reisling and vinegar cider, wait a month, and there you have your perfection in a glass.

Bottles of edible perfume are offered to guests to elevate their sensory experience further. Created by Head Mixologist Mike in collaboration with Oo La Lab, an artisan perfume lab, the perfumes come in three bespoke scents – 'Cloud', 'Summer', and 'Nature'. The experience becomes even more personalised—a true testament to the artistry behind each cocktail. Here it was, an organic, edible perfume. My Summer perfume was an unmistakable scent of pina colada.

But the adventure doesn't end there. Dive into Taste—Umami Elixir, a liquid buffet featuring St. Laurent Gin, sesame oil emulsion, and carbonated tomato confit, topped with house-made tomato jelly. It's a new cocktail sensation that will leave your taste buds tingling and promises an unconventional, savoury flavour with generous overtones of fresh tomato. Super delicious.

The five senses are now truly tickled. What's next?

For those who prefer a classic, like me, GGingerLily reinvents well-loved cocktails like the ZeroºC Negroni, served at sub-zero temperatures to accentuate its honey-sweet finish, a true revelation for Negroni enthusiasts. Negorini is my favourite cocktail, but I was today years old when I tasted my new favourite, the frozen Negroni. You'll love the genie bottle from which they pour the Negroni.

But wait, there's more! Even the non-alcoholic drinks are a blast. There is also a sophisticated mix of mocktails under "Zero-Proof". Guests can opt for 'Coco Boom', a blend of Seedlip Spice 94, seasonal fruits, and coconut juice presented in a whole coconut husk, or delight in 'Kombucha Pearls', a citrusy blend of yuzu essence and house-made molecular kombucha served in a beautiful porthole infuser.

Ginger.Lily also presents a refreshed selection of Nikkei-style Bar snacks. Drawing inspiration from Japanese and Peruvian culinary techniques and ingredients, experience flavourful bites of Warm Scallop Uchucuta served in a shell with a spicy Rocoto dip and fresh spring onions, or tuck into irresistibly crisp Karaage Chicken Wings. Savour hand-made Nikkei-style nigiri sushi platters with Chutoro Tuna, Japanese Sea Bream, and Salmon and foie gras options.
