Vue Celebrates 58 Years of Singapore With a National Day 5-course Menu, Available for One Night Only on 9 August 2023

As Singapore celebrates 58 years of illustrious independence, VUE joins the festivities with an exclusive one-night-only five-course dinner menu of local delicacies. The menu, available only on the evening of 9 August 2023, will feature iconic and renowned local flavours in dishes such as Grilled French Chicken Satay and Mangosteen Ice.

Relax and indulge in Chef Sam Chin’s fine iteration of Singaporean cuisine, savoured against sweeping views of the iconic Marina Bay as we toast to 58 years of independence.

Begin with the Drunken Oyster, a plump and juicy Amélie Oyster No 2, bursting with sweetness and lent local flair with goji berries, ginseng, and chicken essence.

The comforting aromas of charcoal will tempt you to try their Grilled French Chicken Satay; smoky chicken skewers served in a delicate satay sauce. The dish is completed with pickled cucumbers, shallots, and a brushing of egg yolk and truffle, and finished with a side of pineapple and peanut sauce. A fresh alternative is the Steamed Hokkaido Scallop; delicate, mild, and tender with the addition of tofu, umeboshi, and caviar and lightly fragranced with shishito pepper and preserved Szechuan vegetable sauce.

Their buttery and indulgent Pan-Seared Périgord Foie Gras follows featuring a complex five spice smoked duck and paired with braised leek and drizzled with hoisin butter sauce. Or perhaps try their Grilled Maine Lobster Tail, served with crispy kale, scallion angel hair pasta and a savoury lobster broth is sure to tempt those wanting to divulge in seafood.

Pan-Seared Perigold Foie Gras

The Mains, such as the Poached Madai Red Seabream showcase the best treasures and textures of the sea with bolstering Seabream with baby squid, zucchini, fregola, and an uni curry sauce. For meat-lovers, opt for the Beef Duo – Wagyu & Short Ribs to revel in the finest cuts of wagyu beef, served with broccolini, salted egg yolk pumpkin puree, and a green peppercorn sauce. End the night on a sweet note with the modern and innovative Mangosteen Ice, a sorbet with the Queen of Fruits, pampered with almond sago jelly, aloe vera, and lemongrass tea.

Dinner commences from 5.30pm onwards, available for one seating only. Access to the VUE Bar Area is subject to a minimum spend of $150++ per guest.
