Two Engaging Dining Experiences at 15 Stamford

Signature Asian Bistro and Grill restaurant 15 Stamford by Alvin Leung at The Capitol Kempinski Hotel Singapore is delighted to share two upcoming events in February: the launch of their Saturday Liquid Brunch and The Macallan Whisky Dinner.

The Bar at 15 Stamford will be relaunching the Liquid Brunch to become a weekly affair, starting from Saturday, 25 February 2023, from 12 pm to 3 pm.

Usher in the weekend in style with free-flowing speciality cocktails such as the refreshing Jungle Bird, which contains Bacardi Cuatro 4-year, pineapple juice, citrus, and bitter liqueur; Papi's Punch featuring Bacardi Ocho 8-Year, white wine, citrus, and sugar; and the smooth and tart Garden of Goose, comprising Grey Goose vodka, green guava juice, and basil citrus. There will also be classic tipples like Espresso Martini, Negroni, and New York Sour.

Liquid Brunch

To accompany the drinks is an epic lineup of tender meats, succulent seafood, cheeses and charcuterie from 15 Stamford by Alvin Leung. Feast on Poached Maine Lobster and Grey Goose Vodka Salt Cured King Salmon, as well as large sharing plates of Pasture-fed Rack of Lamb and Black Angus Rib Eye—all served with alcohol-infused condiments such as Scotch Whisky Beef Jus and Bombay Gin Hollandaise.

The Bar at 15 Stamford's Boozy Liquid Brunch happens every Saturday of the month and is priced at $178++ per person with free-flow cocktails and $218++ per person for additional free-flow Telmont Reserve Brut champagne. View the full menu here.

15 Stamford by Alvin Leung - Macallan Whisky Dinner 2​​​​​​​

15 Stamford by Alvin Leung will also be serving an exclusive, one-day-only five-course The Macallan Whisky Dinner on Monday, 27 February 2023, from 6:30 pm till late at S$268++ per person.

Whisky connoisseurs will be delighted by the dinner's innovative dishes, which will be paired perfectly with three whiskies: The Macallan Double Cask 12 Years Old, a honeyed whisky with citrus, wood spices and ginger notes; Double Cask 15 Years Old, a harmonious blend of raisin, toffee, and vanilla; and Double Cask 18 Years Old, an amber whisky with rich dried fruit flavours and notes of wood spice and caramel.

Guiding you through the pairing dinner and the various flavour profiles of the whisky is The Macallan's Brand Ambassador, Mark Tay. Appreciate the oaky finish of Macallan while whetting your appetite with a Botan Ebi "Ice Brick" with scampi roe, whisky, coconut & lemongrass foam, followed by the Norwegian King Scallop with toothfish brandade, sea urchin, and crustacean whisky foam.

For mains, savour a decadent Duo of Lamb with spiced carrot, apricot, black garlic crones, and Grand Marnier jus, before indulging in the Wagyu Beef Short Rib with hazelnut purée, radish, onion powder, and green Szechuan pepper sauce. End the dinner with a refreshing yet decadent Key Lime Curd topped with lemongrass ice cream. You may view the full menu here.
