From 1 March 2023, Town Restaurant will be presenting the ‘Seafood Symphony’, a newly curated buffet dinner. Served on Wednesdays and Thursdays, the vibrant gourmet experience will showcase a generous array of seafood delights from international cuisines.​​​​​​​

Diners can watch the chefs in action at live cooking stations, including a Boston lobster roll station and a slicing demonstration of whole New Zealand king salmon and yellowfin tuna, with each fish weighing up to 30 kilograms. For more robust flavours, freshly salt-baked whole salmon with saffron pomelo yuzu sauce will be served at one’s table, and diners can head to the outdoor charcoal grill to discover a selection of smoky, aromatic creations, such as Creole butter bamboo lobster and king prawn.

The repast includes a one-time serving of the ‘Chef’s Special’ — sea urchin in shell with Nomad caviar, soft roasted cauliflower and ponzu wafu in pipette, or lobster and Alaskan crab en papillote with Asian spices — each served on a weekly rotation. Other new highlights include rich curries, fried seafood porridge and oven-baked dishes served to the table, such as three-cheese baked lobster with charcoal crumble and nuts.​​​​​​​

The dynamic experience extends to a do-it-yourself taco counter, starring Hokkaido scallop with Peruvian spices as well as Hamachi (yellowtail) with Southeast Asian spices, alongside a plethora of refreshing toppings. For those craving familiar comfort food, the create-your-own noodle bowl station offers a brimming selection of ingredients, including Boston lobster, Alaskan crab and Hokkaido scallop, paired with a choice of laksa gravy, prawn broth or clear fishball broth.

Dessert_Nitrogen Ice Cream

The seafood theme reaches a sweet finale with the debut of two unexpected creations in the dessert repertoire — liquid nitrogen ice cream topped with fish floss, caramel and salted walnut, as well as chocolate salted egg yolk lava with chocolate sorbet, topped with crispy fish skin. Assembled à la minute, both indulgences combine sweet, savoury, creamy and crunchy for a uniquely delightful outcome.

Classic treats are not forgotten — the dessert section will beckon to diners with timeless local and Western desserts, from pulut hitam to French vanilla custard tart, alongside a tempting array of Peranakan kueh, cakes, puddings, and more.

The Seafood Symphony buffet dinner will be available from 1 March 2023 between 6.30 p.m. to 10.30 p.m every Wednesday and Thursday.
