Tippling Club invites patrons to discover the tracks of their years with the latest continuation of their bar menu — A Guide to Modern Drinking, Volume III - 6 Decades of Music.
6 Decades of Music draws inspiration from Head Bartender Arathorn Grey’s love of music. Each drink pays homage to an artist and their music and can be enjoyed even more if sipped whilst listening to a curated playlist available from the menu.
Designed by head bartender Arathorn Grey, the menu highlights six decades of music, offering a wide selection of crafted tipples inspired by hits and jams over the years. The 31 drinks, most named after an artist and one of their songs, continue the gastronomical journey of the Volume I & II menus, championing exotic, uncommon ingredients, blended together with contemporary techniques.
Guests are invited to download the playlist on Spotify that accompanies the drinks at the start of the menu, then add their autograph to it as they finish, creating a community of shared experiences at the world-famous gastro-cocktail destination.
The menu takes guests first to the 1940s, the decade of swing, jazz, blues and big bands, with three cream-based cocktails.
White Christmas by Bing Crosby (S$24) offers a sweet and creamy festive start, with Metaxa, Christmas mix, snowflake, cacao and cream; whereas Moonlight Cocktail by Glenn Miller (S$26) — a song about a romantic picnic under the stars — is a gin-based milk-wash cocktail made with mango, apple brandy, almonds and topped with a steamed brioche bun piped with elderflower Chantilly cream to evoke the mood of the song.
The 1950s brought a rock n’ roll revolution, celebrated with King Creole by Elvis Presley (S$22), a fun low ABV take on a tropical cocktail with homemade banana liqueur, creole bitters and an absinthe mist, playfully recreating a flying kiss from the King himself. Learnin’ The Blues by Frank Sinatra (S$26) is a nod to Franks’ Italian heritage and his drink of choice: Jack Daniel’s on the rocks.
To elevate the simple drink, Arathorn spent two weeks treating a barrel-aged cask with ruby port, before ageing the blend of rye whisky, amontillado sherry and Punt E Mes, giving the drink a full-bodied flavour.
The 1960s swing in tiki-style with Savoy Truffle by The Beatles (S$26); a boozy tropical cocktail that features a blend of butternut squash, cognac, truffle-infused gin and rum. The bright and refreshing cocktail is balanced with a rich chocolate truffle garnish tossed in ground coffee and icing sugar, which Arathorn handcrafts using pumpkin and chocolate.
Scarborough Fair by Simon and Garfunkel (S$26) accompanies Arathorn’s favourite band with tequila, vermouth, peach, sage, rosemary and thyme.
A unique decade of musical innovation, the 1970s brings a haunting yet calming drink, Gold Dust Woman by Fleetwood Mac (S$39), a champagne cocktail made with Lord Ryan’s Gin and gold-plated ice block. Fancy something unique? Captain Fantastic and The Brown Dirt Cowboy by Elton John (S$26) is a mezcal cocktail like no other, capturing the song’s ‘country’ vibe with a stirred-down earthy mix of butter-washed mezcal with sunflower seeds, Montenegro, bitters and wildflower honey.
The cocktail is topped with an effervescent mixture of dry ice and apple juice, with apple gel and chrysanthemum leaves adorning the rim of the glass for a touch of acidity.
Cocktails inspired by music from the MTV era of the 1980s include the ‘king of pop's’ Man In The Mirror by Michael Jackson (S$24) a clear martini-style cocktail made with bergamot, Nicaraguan rum, hops and sudachi; and Dear Jessie by Madonna (S$24) a fruity and refreshing drink with gin, plum, citrus, port and soda.
For fans of something funky, Get Up Everybody by Salt N Pepa (S$26) is a cocktail inspired by a Dirty Martini. This savoury martini brings together vodka distilled and brined with fresh green kampot peppercorns from Indonesia with vermouth, and is garnished with caper berries.
Drinks to celebrate the 1990s era of pop, rap and alternative music include Big Poppa by Notorious B.I.G. (S$32), a gangster twist on a champagne cocktail with bourbon, cherry, champagne and bitters. Funky Monks by Red Hot Chilli Peppers (S$24), inspired by both the song and artist, offers a fiery blend of Rhum Agricole — a funky rum distilled from sugarcane juice — ginger, blackcurrant and soda for a drink that packs a punch.
To add heat to the drink, guests are challenged to bite on a wedge of lime coated in Togarashi before sipping the cocktail.
In true Tippling spirit, the menu also showcases a bespoke blend of cocktails featuring Lord Ryan’s Prohibition Gin. A selection of Non-Alcoholic Cocktails (S$19 each) is available for those seeking a sophisticated spirit-free alternative and includes 5 non-alcoholic cocktails made exclusively with Lyre’s Non-Alcoholic Spirits.
For true indulgence, cocktails from The Louis XIII Experience (S$150 each) are served in Louis XIII baccarat crystal glasses, with highlights including Barbotage, a balance of Louis XIII, champagne and orange oils, for the ultimate splendour. Toast to a round of drinks with a pair of Louis XIII cocktails (S$280) and hear the euphonious chimes of the crystal glasses.
