The Capitol Kempinski Hotel Singapore is ushering in a new era of dining with its latest offering, the Heritage Afternoon Tea. This culinary experience honours Singapore's rich history and cultural growth with a sophisticated tea service that blends traditional flavours with modern elegance. The Lobby Lounge's new menu pays homage to Singapore's rich history, offering locals and visitors a unique opportunity to appreciate the country's culinary tradition.

The Heritage Afternoon Tea is organised into three thematic segments, each representing a different period of Singapore's history. Chapter 1, titled "East Meets West," honours Singapore's history as a British commercial port in the 1800s. This section combines European cooking skills with Southeast Asian spices, resulting in a lively and diversified flavour profile.

Guests can enjoy a modern spin on Chicken Rice, with poached chicken breast on a fragrant rice ball and a zesty garlic chilli purée. Other standouts include the Hainanese Kurobuta Pork Chop, wrapped in a brioche sando with HP ketchup sauce, and Kaya Toast topped with foie gras butter and hen's egg foam. Pandan Scones are a local spin on traditional scones, served with red bean clotted cream. This chapter is paired with Mist Valley White Shou Mei tea, which complements the complex flavours of these dishes.

Moving on to Chapter 2, "Local Takes Centre Stage," the afternoon tea buffet highlights Singapore's street cuisine culture and the country's growing urbanisation. This chapter promotes local favourites in a refined manner. Guests can enjoy Chilli Crab Petit Pain, a bite-sized treat with hot crab filling in a soft bun. Otak Otak Toothfish, infused with chilli paste and kaffir lime, has a rich, lively flavour.

Sweet delights include Ondeh Ondeh Cake with coconut and Gula Melaka, as well as Bubur Cha Cha Panna Cotta with a light sweet potato foam topping. Mist Valley Pu-Er tea complements these dishes with its earthy overtones, which create a grounding counterpoint to the exuberant flavours.

The final chapter, titled "The Melting Pot," depicts Singapore's transformation into a global culinary hotspot. This part combines international influences with local recipes, portraying the country's rich cultural landscape. Diners can try the Laksa Espuma, a delicious foam formed from the essence of laksa and garnished with steamed scallop prawn curd and dried prawn floss.​​​​​​​​​​​​​​

Nostalgic components include the Milo Dinosaur Berliner, which evokes childhood memories, and the Ice Cream Uncle, a whimsical treat with cilantro wafer and strawberry dacquoise covered with Valrhona chocolate sauce. The chapter is matched with Mist Valley Lapsang Shouchong tea, which has smoky, floral overtones that complement the foods.

The Heritage Afternoon Tea at The Capitol Kempinski Hotel Singapore is a culinary trip through the country's history, costing SGD $52++ per person on weekdays and SGD $59++ per person on weekends and public holidays. Guests can also choose to upgrade to free-flow Charles Heidsieck Brut Réserve NV for SGD $59++ per person or Barocco Prosecco NV for SGD $20++ per person. I love that The Capitol Kempinski Hotel Singapore doesn’t just offer an ordinary high tea in their Lobby Lounge!  Anyone can do scones and finger sandwiches but not everyone can curate a high tea that weaves an intricate story into each and every mouthful of food.  The current theme is Singapore Heritage High Tea.  Over three chapters (courses), you are treated to a journey through Singapore’s culinary history from blending local flavours with those of West through to exploration of the next evolution of Singaporean cuisine. 

It is certainly an evocative experience, both flavours and presentation push the boundaries – traditional chicken curry is served quiche style topped with a piping of potato, chicken rice is reinvented as sushi, kaya is blended with foie gras and spread on toast fingers to be dipped into an egg foam, a play on milo dinosaur presents as a pretty chocolate filled doughnut and uncle ice cream is a blend of Southeast Asian herbs with vanilla ice cream, sandwiched between savoury wavers. I think you get the picture on the creativeness that was evident throughout the experience.  Each course was served with a matching tea from local tea curator Mist Valley, and is wonderfully explained by a very enthusiastic and attentive serving team. 

I take my hat off to the creatives behind this experience, each tasting was complex and surprising!  And hold onto your hats when you get to the durian choux!!  Overall the menu did veer towards the sweet side of high tea and unusually for this part of the world, most the sweet treats were in fact very sweet.  The high tea has two seatings and is very reasonably priced given the quality, variety and amount of food.  If you want a high tea experience that extends beyond the normal in the most enjoyable way, then this is definitely for you.
