This National Day, 1-Arden levels up the celebrations with dazzling views of the fireworks from the 17th and 51st floors of the CapitaSpring skyscraper. Kickstart the festivities with a 4-hands Dinner on two nights, specially curated by Chef John-Paul Fiechtner of Kaarla Restaurant and Bar as well as Chef Lamley Chua of Oumi.

Singapore’s 57th birthday calls for a celebration with enthralling Marina Bay views. Anticipate a delectable 5-course Dinner prepared by Executive Chef John-Paul Fiechtner of Kaarla and Head of Japanese Culinary Development, Chef Lamley Chua from Oumi.

Kaarla Restaurant and Bar

Both restaurants follow the ethos of using seasonal, sustainably, and ethically raised produce to the fullest. Responsible sourcing is at the heart of the cuisines, from Australia to Japan, local farms and right at its doorstep, the world’s highest urban farm – the 10,000 square feet 1-Arden Food Forest.

Chef John will serve up creations focusing on the best of coastal Australia. Kaarla, meaning ‘where the home fires burn’, fires up some of the regions’ finest produce with its custom-built grill and oven. Kissed by fire, satiate the palate with some of Australia’s seasonal bounty from land, river, and sea, cooked from farm-to-table.

Oumi ​​​​​​​

Sharing the same space on level 51 as Kaarla is Oumi. Chef Lamley will follow with kappo dishes prepared with different carefully selected cooking techniques that allow fresh, natural flavours to shine, whilst utilising a ‘nose-to-tail’ culinary approach. The final collaborative course of the night epitomises the symbiotic bond between both restaurants, fuelled by the sharing of experience, knowledge, and purveyor connections between Oumi and Kaarla.

With limited availability, dine window-side at Oumi and Kaarla Lounge to experience the unparalleled panoramic views of the sky, sea, and breathtaking kaleidoscopic fireworks.

A total of only six window tables (seats up to 4 persons per table) are available at Oumi and Kaarla Lounge. A minimum spend of $1,000++ per table applies on 30 July 2022 and $2,000++ per table on 9 August 2022.

1-Arden Rooftop Terrace

For revellers looking to dine alfresco under the starry sky, sip on refreshing beverages and nibble on bar snacks at the relaxing and breezy 1-Arden Rooftop Terrace nestled within the lush 1-Arden Food Forest.

Savour the best of Australia’s coastal produce from Kaarla with the Australian Market Oysters. Priced at $8++ per piece, relish the freshly shucked oysters drizzled with a fig leaf and oyster plant vinegar, or have it poached in lemon aspen cream. Other moreish snacks include the wood-fired “Damper” with macadamia spread, lardo, and lemon balm from the 1-Arden Food Forest ($8++); Pumpkin with pumpkin seed miso and goat’s feta ($18++); and Octopus with pickled boab, smoked leeks and beef-fat cooked muntries ($32++).

1-Arden Food Forest

Imbibe garden-to-glass cocktails featuring ingredients from 1-Arden’s very own Food Forest. The captivating concoctions ($20++) are the perfect blend of both Australian and Japanese ingredients that complement the bold and vibrant flavours of Kaarla’s cuisine. Clink your glasses with the tiki-inspired Coastal Isles highlighting a house-made ginger beer, or the Cold Brew Elixir with spiced rum and cold brew coffee liqueur, layered with cacao white liqueur and pandan syrup, and topped with sparkling pineapple soda.

A minimum spend of $200++ per table (seats up to 4 persons) applies on 30 July 2022 and $300++ per table (seats up to 4 persons) on 9 August 2022.

Arden-milo

Available for the month of August and specially concocted for the occasion, Kaarla Lounge and Sol & Luna have crafted five local-themed cocktails to commemorate the nation’s Independence Day.

Contemporary Australian restaurant and bar, Kaarla, pays tribute to the little red dot with the Malty Madness, a cheeky spiked rendition of the local beverage, Milo. Originating from Australia, the nostalgic drink is enjoyed by Singaporeans in their childhood years, and the grown-up version at Kaarla Lounge is a blend of Courvoisier, cacao white, and Milo powder.

Arden-ondehondeh

The velvety Ondeh Ondeh Obsession is a burst of flavours with rum-infused pandan, spiced rum, coconut juice, gula melaka syrup, and coconut milk. Cool down with the Singapore Sling, an iconic cocktail synonymous with the island city. Invented in 1915 on Singapore’s very own shores, the tropical gin-punch remains a favourite amongst locals as well as visitors from near and far. The cocktails are priced at $18++ per cocktail and $55++ for a set of all three.

Sol & Luna - Let's Go Local

Over at Latin-European Bistro, Sol & Luna, 100 metres up on level 17 of CapitaSpring, soak in the festivities within the ambient indoors or breezy alfresco space. Make a toast to Singapore with the Spiced Singapura, abound with spicy and aromatic notes; shaken with Ron Zacapa rum, falernum liquor infused with local spices of red chilli, cinnamon, and ginger, as well as pineapple juice and homemade cinnamon syrup.

The dessert-like Wicked Chendol is rum-forward with Ron Zacapa rum, Malibu rum, coconut cream, gula melaka, and green-hued rice jelly distinct to the local dessert, Chendol. The cocktails are priced at $15++ per cocktail and $30nett for both.
