With the arrival of autumn, diners may look forward to the highly- anticipated hairy crab season as Michelin-starred restaurant Shang Palace presents these gourmet crustaceans from 17 October to 30 November 2022.
Available for lunch and dinner, guests may savour this seasonal specialty from Taihu Lake as part of a six-course set menu or select from a choice of delectable à la carte dishes.
This decadent delicacy, also known as Chinese mitten crab due to its furry claws, is available only for a few months every year, making it a seasonal delight not to be missed. Highly coveted for its rich and creamy golden roe, this luxurious crustacean will be prepared by Chef Daniel Cheung using various culinary techniques to showcase its distinctive and delicate flavours.
Preserving the freshness and natural sweetness of the prized crustacean, the Steamed Hairy Crab will hit the mark on all fronts. This aromatic dish is meticulously prepared in one of the simplest cooking methods and complemented by a cup of ginger tea to balance out the yin and yang elements, as hairy crabs are believed to be ‘cooling’ for the body.
Available on the à la carte menu is the Braised Imperial Bird’s Nest with Hairy Crab Roe, a luxurious dish crowned with a luscious hairy crab roe; Braised Fish Maw with Hairy Crab Roe, where the fish maw is cooked with chicken broth, ginger and onion, topped with prized hairy crab meat and roe before serving, forming a luxurious dish with a variety of textures in every bite.
Another signature creation is the Braised Hairy Crab with Diced Bean Curd served with Spring Onion Pancake. The homemade pancake is pan-fried to crisp golden brown with a hint of green onion and accompanied by braised hairy crab and diced bean curd, promising a rich and tasty highlight that bursts with a myriad of flavours.
Also on the à la carte menu are the customary autumnal delicacies, such as Traditional Braised Lamb with Black Mushrooms and Bamboo Shoots served in a Clay Pot and Braised Softshell Turtle with Preserved Salted Duck served in a Clay Pot – popular hearty Cantonese autumn and winter specialties to soothe and warm the body.
For the ultimate Hairy crab experience, partake in a sumptuous Hairy Crab 6-course Set Menu, priced at SGD268++ per person (minimum two diners) that encapsulates the essence of the seasonal crustacean. The highlights include Chilled Fresh Marinated Abalone marinated with Japanese Sake, Braised Bird’s Nest Broth with Hairy Crab Roe and Bean Curd, Sautéed Lobster with Hairy Crab Roe and Braised Inaniwa Noodles with Hairy Crab Roe and Hairy Crab Oil.
