Celebrate National Day with a special dinner at Marina Bay Sands’ Spago as they’ve planned an amazing menu for the occasion. Reserve your table for any evening in August and dig into Kaya Toast (seared foie-gras, pandan-coconut jam, foie-gras espresso mousse, toasted brioche), Handmade Sweet Corn Agnolotti, Japanese Sea Bream “Laksa”, and Salted Caramel Souffle. The dinner costs S$55 per person and seems to be perfect for 55 years of Singapore.

We went as a group for my friends birthday. Because we had nine in our party, we were relegated to the preselected menu. I was disappointed initially because there wasn’t anything that looked fantastic. They offered a duck, cod, sirloin (strange cut for a fine dining restaurant), and Iberico pork chop. After discussing the selection with the attentive waitstaff, I chose the Iberico pork ($65). While I was waiting, we were served a selection of fresh breads and herb and plain butters. The sun-dried tomato roll was fantastic. The cranberry nut bread was also a favorite. When the porkchops arrived, I was surprised at the large portion. It was simply the best pork I have ever eaten. Ordered medium, the salt and herb crust locked in every ounce of juice in this Smokey, delicious piece of heaven. I’m not kidding that my mouth is watering right now just thinking about it! To the side, was a shallot purée with just a hint of horseradish. It was seated atop a reduction gravy and biased cut asparagus. The asparagus was perfectly cooked; tender, but with texture. At the beginning of the ordering process, the waiter had asked me to choose a dessert. My only two options were a gelato and a soufflé. I had had a terrible experience with a tasteless soufflé at Morton’s steakhouse so I was very hesitant. The waiter however, assured me that it was phenomenal, one of their “Signature” dishes. The salted caramel soufflé $24) came out accompanied by a small dish of fresh whipped cream and a Fuji apple sorbet. My friends and I debated heatedly about the composition of said sorbet. It was pink so we were sure there was passionfruit. It was tangy so we were sure there was acid like lemon juice, or maybe mango. Two waiters insisted that it was simply Fuji apple purée sorbet. Which, makes sense accompanying a salted caramel soufflé. Honestly, we didn’t even eat them together because the soufflé was so fabulous by itself! It was truly worthy of its “signature” moniker. I was surprised at how soufflé could be both light and rich, but it was. All in all, the atmosphere was good, the wait staff excellent, and the food, incredible!
