With inspirations stemming from their travels, the passionate husband-wife duo’s favourite recipes are refreshed with contemporary tinkering and a unique twist of ingredients

Don’t be misled by its name! Lè Fusion is not your typical East-meets-West restaurant. Rather, be prepared to travel the world from the dinner table. Recently opened in November 2019, the passionate husband and wife duo behind Lè Fusion takes inspiration from their walk through the world, fusing all of their favourite eats in one place.

Nestled near the Singapore River, Lè Fusion is a chic restaurant and bar where lèisure dining meets a lègacy of culinary innovation. Lè Fusion is all about bringing 樂 (‘le’ which means ‘joy’ in Chinese) in every aspect of its journey from recipe innovation, curation of ingredients, to an exquisite culinary and other-worldly experience for diners.

A key feature of Lè Fusion cuisine is focusing on the creative use of quality ingredients to reinvent the dining experience, while preserving the DNA of Chinese cuisine. Every dish imbues a characteristic attention to detail, and surprises with a light delicate touch.

Start your course with the Imperial Double Boiled Soup, a luxe rendition of Buddha Jumps Over the Wall unexpectedly elevated by premium nu er hong rice wine and the pan-seared Rougie Foie Gras served atop an unassuming bed of Chinese glutinous rice.

Experience a melting pot of well-loved recipes and masterful cooking techniques through the main courses with highlights on Crispy Pork Roulade, Asian Crusted Provencal Lamb Rack, Tsingtao Beef Fillet, and Braised Abalone Seafood Rice. Here, you may find imprints of Europe, Australia, and Asia’s very own delicacies transformed into delightful dishes using distinctively Chinese cooking techniques and ingredients.

Even its desserts are  prepared with slight but impactful tweaks to regular offerings. The  Lè Fusion Chendol and Panna Cotta with Sweet Glutinous promises a playful sweet finale which cannot and should not be missed.

Drinks at Lè Fusion go hand-in-hand with its Tapas menu, especially its signature Crispy Pork Belly Mantou, a special rendition of the familiar braised pork buns (kong bak bau) drawing influence from the Philippines.

Lè Fusion Confusion at Robinson Quay

It’s usually fills me with some trepidation when reviewing a restaurant when it has ‘fusion’ in the name. I do, however, find that it usually provides a good rhyme for the headline writers. Lè Fusion doesn’t disappoint - it’s your typical East-meets-West restaurant.

Even if most of the dishes we consume are the result of many cuisines fusing over time, if you're going to say that your new restaurant is fusion dining, then you'd better make sure that the food is epic - especially in a place like Singapore.

Thousand of hours go into creating and refining top notch Asian and European dishes. Their individuality is what makes them stand out. In Singapore, we have an unbeatable array of spectacular Chinese restaurants. We have some of the best Michelin starred French food in Asia. There are Italian restaurants that would make an Italian expat think of his mother’s cooking back in Verona. Why try to fuse them together?

Lè Fusion does have several things going for it - one being the location. It’s next to the Singapore River at The Pier at Robertson. Secondly, the staff are very kind and helpful. Thirdly, the decor is bright and bold. We were also sat with the fabulous Power 98 DJ Carmen Ang.

Sadly, the food was mainly fused together. We started was muse bouche which was a doughy and tasteless mess. The Crispy Pork Belly Mentou (S$12) was slathered in I think what was salad cream - I believe KFC do something similar, which is better. The cracking was very crispy, so that’s something. So far so fusion.

We have two cats and the Imperial Double Boiled Soup (S$28) reminded me of what they eat - the taste was pretty much how it smelled. The Asian Crusted Provincial Lamb Chops (S$46) were so small that the above cats would have complained vigorously. The Rougie Foie Gras (S$25) was as hard as granite - usually this is the kind of thing that I really look forward to and I was bitterly disappointed, especially when the chef made the poor excuse about cooking it for large numbers.

There were a couple of saving graces - the Trio Pasta (S$34) was pleasantly cooked and al dente. The Tsingtao Beef Fillet (S$42) also merits a mention.

Lè Fusion is run by a well travelled husband and wife couple. The husband owns several entertainment outlets and the wife, Catherine, who is Managing Director of Lè Fusion effused: "Since more people are avoiding crowded places due to safety concerns amidst the COVID-19 situation in Singapore, we expected business to take a hit and a drop in footfall. Surprisingly however, our business has not been too badly affected. We still have both regulars and new customers coming in to dine. Even for Valentine's Day, we were fully booked."

We are told that ‘le’ means ‘joy’ in Chinese. Alas, I am unable to figure out the reason for the use of the grave accent in Lè. Italian? French? Slovenian? Vive la confusion!

Le Fusion is introducing a whole new level of modern Chinese Fusion cuisine that are truly personalised for the discerning individuals who understands the true passion of exquisite taste.

Great place to dine! Love the decor and the service is attentive! The food was a wonderful fusion of East and West!

I had their signature foie gras which was cooked to perfection and the sauce was a good balance. My main was lamb chop which I definitely will order again in my next visit. Service was impeccable and nice ambiance.
