Jungle Ballroom Provides Undiscovered Treasures of Southeast Asia's Craft Spirits and Bartending Artistry to Lion City Cocktail Aficionados With Adrian Besa.

In the lush landscape of Southeast Asia, Jungle Ballroom at Mondrian Singapore Duxton emerges as a dynamic centre of modern Asian mixology and exquisite enjoyment. This cocktail sanctuary, led by respected head barman Adrian Besa, opens its doors to a one-of-a-kind adventure—'Jungle Journeys.'

The first invention, 'Little Pari,' a Martini-style cocktail, is a celebration of Pari's Herbal Kulen Gin, showcasing the untapped spirits and flavours of Southeast Asia. Adrian and his crew start on an ongoing journey to expose the skill, abundance, and essence of the region's jungle through a creative exchange. The Jungle Ballroom menu takes guests on a spectacular libationary trip through the Jungle Canopy, Understorey, and Forest Floor, with each beverage reflecting the wealth of South-East Asia. With a 2 a.m. licence, the venue encourages late-night celebration, making it a haven for sybarites.

Adrian and his colleagues go beyond the bar, launching 'Jungle Journeys' to seek unusual flavours and develop young talent. The first adventure began in Asana Bar in Siem Reap, Cambodia, hosted by Sophary Unn, also known as Pari (pictured below with Adrian). The crew investigated the local jungle and Pari's plantation, advocating for sustainable farming practises and producing 300 bottles of herbal gin monthly.​​​​​​​

These travels go beyond mixology, with workshops at local hospitality colleges like Siem Reap's École d'Hôtellerie et de Tourisme Paul Dubrule. Adrian emphasises cultural engagement, knowledge sharing, and generating possibilities for the future generation of bartending stars. The collaboration between Jungle Ballroom and the visited locations is a two-way street, encouraging talent to Singapore and developing connections. "The Jungle Journeys are a cultural exchange," Adrian explains. We learn from the people we meet, and they learn from us."

When the crew returns to Jungle Ballroom, they share their experiences, ingredients, and skills, improving both employees and patrons. 'Little Pari,' with its rich botanical notes produced locally in Siem Reap, illustrates this commitment to regional quality. Adrian is excited to share this floral gin, saying, "There's nothing I love more than sharing all the amazing produce, spices, and spirits from around Asia."
