Rebecca Assice experiences Dining Among the Clouds at the Singapore Flyer's Newly Revamped 165 Sky Dining

In the heart of the Lion City, where the skyline meets the clouds, a very special culinary experience awaits at the Singapore Flyer's 165 Sky Dining. I had the pleasure of embarking on this newly revamped sky high dining adventure with a dear friend and I we were more than impressed from beginning to end.

What struck us immediately was the exclusivity and intimacy of the setting. Each capsule accommodates only a handful of tables, ensuring a private and romantic ambiance that's perfect for an intimate date night or a special celebration. As we settled into our seats and the capsule gently ascended, the panoramic views of the Singapore skyline unfolded before us, setting the stage for a truly spectacular dining experience.

One of the appreciated features of 165 Sky Dining is the well-timed pacing of the courses. With one course elegantly presented at every rotation, there's no rush to savour each dish, allowing patrons to bask in the grandeur of the view without feeling hurried. This thoughtful approach enhances the overall experience, transforming the meal into a leisurely journey through the sky.

Now, let's talk about the real star of the show – the food. Often, in attractions combined with culinary delights, the gastronomic aspect can be overshadowed. However, I was pleased to discover that this is not the case with 165 Sky Dining. The food served here is worthy of any Michelin star restaurant, completely elevating the experience.

Our culinary journey commenced with a delightful Amuse Bouche adorned with caviar and delicate flowers, setting the tone for the feast that awaited us. Our first course, the starter, was a refreshing and flavourful marinated goat cheese with watermelon, green herbs puree and raspberry coulis.

The second course, known as the appetiser, impressed with a sous-vide lobster tail served on a bed of mesclun with pomelo and mango dressing. The succulent and indulgent lobster, paired with the vibrant dressing, created a palate-pleasing sensation that left us eager for the next course.

For the main course, we opted for the Black Angus "Beef Bourguignon" and the Miso-Glased Black Cod. The beef, served with saffron potato mousseline, spring vegetables, and garlic crouton, was a melt in your mouth and rich delight. On the other hand, the Miso-Glased Black Cod, accompanied by seasonal vegetables, saffron potato mash and green pea-wasabi coulis, was a light yet delicious combination of Asian-inspired flavors that delighted our taste buds.

Even though I am not normally much of a dessert person, it was this dish that truly took our breaths away. An absolutely beautiful piece of art, the Wild Strawberry Mousse Cake was as delicious as it was eye-catching. Visually stunning and equally delightful on the palate, the dessert was a perfect conclusion to our epicurean journey.

165 Sky Dining at the Singapore Flyer is a harmonious blend of awe-inspiring views and impeccable food craftsmanship. Ideal for special occasions or when you simply want to impress with both the skyline and the cuisine, this experience is a gastronomic adventure that transcends the ordinary. So, elevate your dining experience and savour the heights of culinary excellence amidst the clouds at the Singapore Flyer's 165 Sky Dining.
