Discover an Evening of Southern Italian Cuisine by Chef De Cuisine Paolo Benedet of the Cliff With Wines From Produttori Di Manduria

Join in, for a Magnifique night of gastronomy at Sofitel Singapore Sentosa Resort & Spa, paired with fine wines at the Produttori di Manduria Wine Dinner, where their celebrate the art of winemaking and culinary treasures of Southern Italy.

The one-night wine dinner is on 27 June 2023 at The Cliff. Paolo Benedet, Chef de Cuisine at The Cliff, presents a five-course menu that highlights authentic Southern Italian cuisine. Chef Benedet who has a wealth of experience working in luxury hotels and restaurants across Europe and the Caribbean, takes a traditional approach to cooking and uses ingredients reminiscent of the Mediterranean.

Produttori di Manduria is a prestigious winery located in the heart of Southern Italy. With a commitment to excellence and a passion for the region’s native grape varieties, the winery produces exceptional wines that capture the essence of the terroir and showcase the rich viticulture heritage of Southern Italy, particularly the Primitivo grape variety.

The five-course dinner begins with an antipasto of Crudo di Ricciola. The raw marinated king fish, with orange sauce and fennel pollen is paired with Alice Verdeca IGT 2021, which has delicious scents of hawthorn and acacia. The second antipasto, Polpo in Pignatta Modern, or spiced octopus with pepper emulsion and Puglia olives and potatoes is paired with AKA Primitivo IGT 2021, a rose with flavours of strawberry and raspberry.

Complementing the pasta dish, Orecchiette alla Cime di Rapa, or orecchiette pasta with broccolini sauce, is the Primitivo IGT 2022, an intense and complex red wine with hints of cherry, plum and blackberry.

The main dish is Agnello Arrosto, a roasted lamb with smoked eggplant emulsion, that pairs well with the Elegia Primitivo Di Manduria Riserva 2019, a deep ruby red wine, with hints of nutmeg, vanilla and cloves. To end the meal, Chef Benedet will present the Giardino Meditteraneao di Frutta, or mango compote with sakura crème with a chocolate shell.

An all-embracing feeling as I stepped into the lobby of The Sofitel Singapore Sentosa Resort & Spa. I was here to taste a new menu at The Cliff with Chef Paolo at the helm.

Architecturally perfect, this has always been my favourite hotel on the Island, the sound of water features so soothing to the ears, immediately transporting me to a different world.    

On a bright sunny afternoon with uninterrupted views from The Cliff to the South China Sea, this could have been the Mediterranean! Tranquil and relaxed to the tee, an outdoor seating deck welcomed diners from 5-7pm for a sunset treat while indulging in free-flow drinks and canapes.

Pulling my gaze back to the menu at hand, I made my choice from the three course weekday set lunch priced at $49++ per diner. I went with the Buffalo Mozzarella Caprese dressed with colourful cherry tomatoes, pesto & an aged balsamic reduction.

Flown in from Italy this was mozzarella you had to try. Soft and fresh you will be able to tell the difference. Portions were generous so I decided to share courses with others at the table.

The endive & frisee salad was to die for. If you enjoy salads like I do, make this choice of antipasto. Dressed well with a Gorgonzola dolce (a creamy blue cheese with a delicate hint of sweetness), candied pecans, pomegranate and cherry vinaigrette. What a combo!     

Chef Paolo’s menu reflected commitment to sustainability whether sourced from Italy or locally. The sea bass main I chose arrived. Herb-roasted Barramundi grilled to perfection accompanied by a well-made vegetable ratatouille.

The depth of taste in this ratatouille, wow! I could only imagine the best olive oil and tomatoes that made such a full-flavoured base, to vegetables that happily soaked it in. I devoured every bit of it.

Meat lovers have the option of a pork pluma served with braised cannellini beans and lardo (treated lard), onion agrodolce (traditional sweet and sour sauce in Italian cuisine), smoked chilli and cider syrup. Delicious!

Vegetarians what about a spaghetti Pomodoro? A traditional Italian tomato sauce with 24-month aged Parmesan cheese (plant-based from OnlyEg Parmigiana).   

With something for everyone at The Cliff, diners who fancy a tipple at lunch could top up $12++ for a house wine or beer. Those who prefer a light lunch perhaps two courses for $39++ might suit better?

Chef Paolo a native of Pordenone in Southern Italy promised me his mother’s version of Tiramisu. A full glass all to myself with a Piccolo to pair, my attempt to have half was defeated. Too good to leave, alas, I savoured every spoonful of the entire dessert.

What else can I say? A place to relax and wind down to the soft hues of jazz playing in the background, The Cliff has so much to offer. Lunch from 12-3pm and dinner from 6-10pm check out the reasonably priced set dinners too.

I walked around this hidden gem that sprawls 27 acres of tropical woodlands to see the sustainability efforts put in by The Sofitel Singapore Sentosa Resort & Spa. I truly felt I was in the Meditteranean…..
