Let it be an unforgettable Mother’s Day celebration with a sumptuous feast at Zafferano. On 7 May 2022, savour a delectable Italian Mother’s Day brunch (from $108++ per person) overlooking the spectacular Marina Water Front, accompanied by unlimited champagne, sparkling and house wines. Indulge in a splendid selection of appetisers, primi, and desserts served sharing style, and individually plated main courses.

To start, enjoy five refreshing appetisers such as Hokkaido scallop carpaccio with smoked corn, orange, and capers, and panzanella with tomatoes and stracciatella. Another highlight is the octopus salad with potatoes and black olives – one of the favourite dishes of Chef’s mother and wife. It is finished with a drizzle of Amalfi lemon juice and zest, to enliven the flavours of this refreshing appetiser.

Zafferano Champagne Brunch

The two primi pasta dishes are dedicated to the women in Chef’s life. Grandmother lasagna, as the name endearingly suggests, is an homage to his grandmother who often asserted that a good lasagna must be at least 10cm tall. Chef’s interpretation presents

20 layers of house-made pasta sheets filled with wagyu beef ragu. The lasagna is portioned and pan-seared for the crispy edges, favoured by lasagna lovers. The calamarata with lobster ragout and brandy is inspired by Chef’s mother-in-law. The traditional calamarata, hailing from Southern Italy, is served with a decadent lobster ragu that is simmered with brandy making this dish every mother’s favourite.

Guests take their pick of the main course from three alluring choices. Two dishes present flavoursome chargrilled meats: a tender Jac wagyu striploin with red oak lettuce and smoked bone marrow (supplement $25++); and a juicy aromatic herb crusted pork loin with broccoletti and butternut. The third main course showcases black cod with scampi cacciucco and confit tomatoes. The modern take on the hearty Tuscan stew was the first dish Chef cooked for his mother-in-law; his loving tribute to her this year.

Conclude the sumptuous fare with a bountiful array of fruits and desserts featuring classic favourites such as tiramisu, as well as rum baba, a yeasted cake soaked in Zacapa rum syrup. Inspired by fond memories of Chef’s mother’s rendition of the rum baba, the sweetness of the cake with the lingering notes of Zacapa rum will surely make celebrating Mother’s Day at Zafferano worthwhile.
