Peppermint launched its much-anticipated Tantalising Thai buffet on 13 March 2026, and under the direction of Chef de Cuisine Leon Yee and his culinary team, it delivers one of the most expansive and thoughtfully assembled dining experiences in Singapore right now. What is the setting like at Peppermint?
Step out of the lift on Level 4 and you step into nature's embrace. The restaurant is designed surrounded by lush greenery and open space, with a spectacular view of the PARKROYAL COLLECTION hotel's extraordinary architecture - one of the most visually distinctive buildings in Marina Bay. For those wanting something more intimate, cocoon-shaped dining pods offer seclusion without sacrificing the view. The atmosphere is genuinely relaxed; it feels less like a hotel restaurant and more like dining inside a little forest.
What's on the Tantalising Thai menu?
Chef Leon's Thai spread is anchored in heritage recipes crafted with guidance from the Tourism Authority of Thailand. The Tom Yum Talay, Roasted Duck in Red Curry and Thai Massaman Curry Lamb Ribs all deliver on depth of flavour.
The Pu Phad Phong Kari – Stir-Fried Mud Crab with Curry Paste – is a showstopper, and the Josper Grill adds a live-fire dimension that sets this edition apart: think Lemongrass Roasted Wagyu Beef Short Plate with green mango and fragrant Grilled Chicken Skewers evoking Bangkok's street-side satay stalls. Food presentations throughout are visually stunning – every station is composed with the kind of care that makes you want to pause before you make your selection.
What else is on offer beyond the Thai menu?
Quite a lot, actually. The Signature Seafood & Lobster Laksa Tower is a centrepiece attraction – and the wider seafood station is extraordinary, with crab and lobster in generous, almost theatrical abundance. A sushi station runs alongside it. There's a well-considered kids' section with pizza, pasta and familiar western options too. Thoughtfully, given the Ramadan season, a dedicated Middle Eastern station ensures guests observing the fast can break it with fitting dishes – inclusive dining done with genuine care.
The customisable Laksa is a personal highlight: built to your own preferences, with ingredients drawn in part from Peppermint's remarkable Urban Farm just outside the restaurant, which cultivates over 60 varieties of herbs, edible flowers, fruits and vegetables. Farm-to-table isn't a marketing line here – it's genuinely woven into the experience.
What about Sensational Seafood Sundays?
If a Sunday visit with the family works better, Peppermint runs a dedicated Sensational Seafood Sunday buffet every week from 12pm to 3pm. Expect oysters, snow crab, lobster claws, rock lobster, clams, half-shell scallops, fish and prawns – all ocean-to-table fresh. Little ones get their own kid-approved mini-buffet with Halibut Fish & Chips, Hawaiian pizza and Nutella churros (Yum!), plus hourly magic shows and roving balloon artists.
