Altro Zafferano presents a one-night-only Chateau d'Esclans Rosé Wine Dinner ($198++) on 29 July 2023, 7pm. An exquisite gastronomic experience, curated by Executive Chef Andrea De Paola and Head Chef Daniele La Rocca, featuring a four-course seafood menu paired with the best wines from Château d’Esclans, celebrating a night of rosé, Provence and Mediterranean flavours.
The evening commences with a selection of Canapes, paired with the exceptional Chandon Garden Spritz. Specially crafted with navel and blood oranges macerated with dried orange peels, herbs and spices, the sparkling wine has a spicy character and a zesty yet rich orange body. With a delicate buttery finish, it refreshes the palate for the evening ahead.
Relish the alluring Alaska King Crab Salad with Kohlrabi and Lavender which is paired with Chateau d’Esclans Whispering Angel 2022. The dry and refined wine holds an intricate perfume of rose-hip and pot-pourri with a crisp, medium-body profile and hints of tartness from red berries.
The creamy Risotto Mascarpone with Seaweed and Hokkaido Scallops impresses with deep umami flavours. A brilliant pairing with the Chateau d’Esclans, ‘Rock Angel’ 2021 – a powerful and elegant wine showcasing firm acidity profile with a long and silky finish.
The main course presents Sole Fish with Potatoes Fondant, Sunchoke and Grapefruit Emulsion. The exquisite fare is complemented with Chateau d’Esclans, Garrus 2021 – a 5-star gourmet rosé exuding hints of hawthorn with a toasty body that finishes with aromas of white flowers.
For dessert, the Strawberry with Stracchino, Pistachio, Olive Oil concludes the gastronomic evening with the accompaniment of Chateau d'Esclans, Les Clans 2021. A sophisticated wine made from grapes exclusively from the vineyards of Chateau d’Esclans, it is full-bodied with ripe pineapple and ginger notes and subtlety of black licorice.
