The highly awaited opening of Le Pristine Singapore is expected to create a splash in the city's dynamic culinary scene. This collaboration between Hyatt and renowned Dutch chef Sergio Herman represents a new chapter in the Grand Hyatt Singapore's culinary adventure. The casual fine dining restaurant will open in October 2024 and will offer a lively celebration of Italian flavours that are artfully blended with Herman's Zeeland culinary history. Le Pristine Singapore will occupy the Grand Hyatt's former mezza9 area, providing an immersive experience that combines art, design, fashion, music, and great food.

Chef Sergio Herman's culinary heritage may be traced back to Zeeland, a Dutch coastal province noted for its fresh seafood. Herman's goal for Le Pristine Singapore reflects the purity of Italian cuisine through his unique use of Zeeland ingredients and techniques. Herman's style has evolved since his early development of his family's restaurant, Oud Sluis, into a three-Michelin-starred establishment, as he has expanded from Europe to Asia.

The first Le Pristine in Antwerp currently has a Michelin star, while the Tokyo location, which debuted in late 2023, is recognised in the Michelin Guide. Singapore is next in line, promising a sophisticated yet accessible eating experience.

Le Pristine Singapore, designed by NAO Taniyama & Associates, will have the same ambiance as its Antwerp counterpart while adding a distinct local flavour. Guests will be treated to a visually magnificent environment accentuated with artworks by Dutch and Belgian artists, which are rarely seen in this area of the world. The room embodies Herman's multifaceted approach, which celebrates life's joys through five pillars: food, fashion, design, art, and music. The dining experience will focus on elegant yet approachable dishes that combine Italian flavours with the best of Zeeland ingredients.

The launch of Le Pristine Singapore follows the massive refurbishment of the Grand Hyatt Singapore, which was finished in mid-2024. This revitalisation has given fresh life to the historic hotel and the Orchard Road shopping district. Le Pristine Singapore, with three entrances, including a sweeping staircase from the hotel lobby, will serve as the focal point of this revitalised area.
