With the introduction of Shoukouwa Shinjidai, a brand-new contemporary Japanese restaurant, Singapore's bustling F&B scene is poised to undergo a delightful transformation.

This culinary jewel is offered to you by the dynamic duo of Emmanuel Stroobant and Kazumine Nishida, the famed Two Michelin-starred Chefs behind Saint Pierre and Shoukouwa Sushi Restaurant. Shoukouwa Shinjidai, located within the magnificent Conrad Singapore Orchard, promises to revolutionise Japanese cuisine, providing a gourmet encounter unlike any other.

The name "Shinjidai" means "a new age" in Japanese, which wonderfully captures the essence of Shoukouwa Shinjidai's kaiseki-inspired food with a twist. Prepare for a multi-part gastronomic adventure that will tantalise your senses with appetisers, soups, sashimi, cooked entrees, and a rice course, concluding in a delectable dessert. Each course incorporates the best seasonal ingredients, expertly recreated to please the most daring palates.

"The Boss," Emmanuel Stroobant, envisions Shoukouwa Shinjidai as a stuffy-free Japanese fine dining experience. Guests can leave their formality at the door, converse freely with the outstanding cooks, and savour food so seductively delectable that they'll beg for more. This restaurant is Emmanuel's passion project, born of his desire to establish a venue where customers may enjoy the delight of dining without sacrificing culinary perfection.

A Distinctive Dining Experience

Shoukouwa Shinjidai's interior is a work of art, thanks to Japanese interior designer Tom Hisano of Toms & Design Associates. Tom Hisano has given the restaurant a distinct style by drawing inspiration from its sibling company, Shoukouwa Sushi Restaurant.

As you enter, you'll notice an unassuming entrance set against a light grey, hand-painted concrete wall that oozes industrial appeal. The reception hall has a natural stepping stone floor that leads you to the main stage—the Japanese hinoki wood counter where expert cooks prepare your chosen menu. A carefully crafted playlist of current pop-jazz and soft rock will serenade you during your dining experience, creating the perfect mood that changes with the time of day.

Innovative, Quirkily-Named Courses

Shoukouwa Shinjidai Ankimo

Each course at Shoukouwa Shinjidai is named after a song, adding a whimsical twist to the dining experience. For example, "Hey Big Spender" contains a visually appealing trio of caviars, while "Whet My Appetite" features an Amela tomato stuffed with Bafun uni and a rice vinegar sauce with a citrus tinge. "Like A Virgin" features akami with a unique dipping sauce flavoured with Mexican coffee beans.​​​​​​​

The menu also includes delightful cooked delicacies such as "Born To Be Wild," which blends ankimo, daikon, and persimmon in a ponzu, dashi, and mirin sauce. "Sweet Child O' Mine" is a dish of kegani (hairy crab) and rice with gazami crab roe sauce and pickled koshin daikon (watermelon radish).

Shoukouwa Shinjidai sources tableware from several prefectures to enrich the contemporary kaiseki experience. Glassware from Tokyo's Sumida and Taito districts, Arita-yaki porcelain from Saga, and award-winning tableware from Nousaku in Toyama are all available.

Meet the Maverick Chef Ensemble

Shoukouwa Shinjidai Team

A trio of brilliant chefs lead the devoted staff at Shoukouwa Shinjidai. Gabriel Low, widely known as "The Fixer," is in charge of the implementation of modern kaiseki dishes after working at Saint Pierre and Shoukouwa. His speciality is perfectly mixing tradition and modern flair.

Gabriel is aided by two more culinary titans: Kanekuni Taiga, "The Handler," and Luqman Nul Hakim, "The Finisher." Kanekuni offers extensive training experience from established Edomae sushi restaurants in Niigata and Tokyo, which will culminate in the debut of Taiga Dining in Singapore in 2022. Luqman, on the other side, learned at Shoukouwa under Nishida and acquired more experience at the Michelin-starred Seroja before joining the Food Inc family.

Indulge in Seasonal Omakase Menus

Shoukouwa Shinjidai Tomato

Shoukouwa Shinjidai provides three omakase menus, each one adapted to the seasons and available ingredients. Lunch is available on the Kaze ($250++ per person) or Mio ($380++ per person) menus. Dinner options include the Mio ($380++ per person) and Yume ($480++ per person) menus.​​​​​​​

Location and Opening Hours

Shoukouwa Shinjidai is located at 1 Cuscaden Rd, #01-03/04 Conrad Singapore, Singapore 249715. The restaurant is open from Tuesday to Saturday, with a single lunch seating at 1 p.m. and two dinner seatings at 6 p.m. and 8:15 p.m. Please keep in mind that Shoukouwa Shinjidai is closed on Sundays and Mondays.
