Spice Brasserie Unveils a Brand-New Dining Concept
Starting from SGD34 per person (Lunch) and SGD42 per person (Dinner)
Long known for its sumptuous Asian-style buffet spreads, Spice Brasserie has recently unveiled a refreshed and gorgeous new look complete with a brand-new exciting dining concept that embraces the best of Asian street food with innovative surprises.
The extensive buffet line comes with four outstanding live stations – Charcoal Grill, Tandoor, Asian Salad Bar and Teppanyaki Ice Cream.
Some unique dishes to look forward to such as Saigon Pancake, Nanjing Salted Duck, Vietnamese Broken Rice Claypot Porridge (cooked over the charcoal grill), Carrot Cake (grilled and served ‘potong’ style) and Squid Ink Naan.
For those with a sweet tooth, the restaurant’s own rendition of the old school Rum Ball, Muah Chee, Durian Pengat and Cempedak Crumble are must-haves.

Already established as a must go to destination for their buffet, Spice Brasserie has redesigned their menus theme. Think street food from all across Asia with the chef’s special innovative twists creating a unique and delicious dining experience.
There were many highlights for me in an overall outstanding buffet. The meats were incredible. Charcoal grilled, these are consistently on the menu. The Crispy Pork had a perfect crackle on the outside and was tender and juicy on the inside.
The lamb was cooked to a perfect medium rare for me and the Char Siew practically melted in my mouth - it was so tender. All of these delights were accented by a gorgeously sweet smoky grilled pineapple. Heaven for a carnivore such as myself.
As I travelled along the four live stations of the buffet I was definitely taking an Asian culinary tour. From Japan (where I started) with the freshest Sashimi to India (where I ended before dessert of course) with the mild sweet creamy butter chicken, accompanied by Squid Ink Naan a unique twist on the more traditional naan.
In between I visited China, Taiwan and Vietnam just to name a few. Highlights for me included the Claypot Porridge with Barramundi fish, clams broken rice, and oysters; Crispy Fried Fish with Spicy Mango Sauce; Saigon Pancake with prawns, bean sprouts and mung bean and an absolutely divine Chinese Pancake with Hoisin Sauce.
The dessert station has a variety of different sweets, but the two most unique features are the Homemade Teppanyaki Ice Cream with made to order mix –in fruits and sweets and their own unique Durian Pengat with Sticky Rice.
Expats...I would encourage you to not be afraid of the durian and try this dessert. It has an unusual flavor but was quite OK, paired with the sticky rice and the coconut milk. Got to do it once - Right?
In addition to the fabulous food, what I really liked about this buffet was the selectiveness of what they serve.
You will not be overwhelmed by too many choices, everything they serve is very well thought out and highlights the best of different Asian countries.
I also appreciated that at each of the four stations (Charcoal Grill, Tandoor, Asian Salad Bar and Dessert featuring Teppanyaki Ice Cream) there are Chefs who can customize dishes for you. It’s a very personal touch at Spice Brasserie with excellent staff - all very friendly and welcoming.

This station is a befitting tribute to the hotel’s location in the heart of Little India and offers North and South Indian fare. Diners must sample the Squid Ink Naan , a striking inky coloured flatbread that pairs perfectly with the tandoori items and honest-to-goodness sides, the likes of Butter Chicken and Gobi Manchurian.
Asian Salad Bar Appeasing ‘Do-It-Yourself’ salad lovers, the restaurant offers unique ingredients that are tasty yet wholesome. Diners can look forward to superfoods like quinoa and kale as well as street food finds compromising of Kimchi, Japchae Noodles and Braised Tau Kwa to form the salad base , condiments such as Shrimp Floss and Crispy Soya B eans , along with delicious dressings the likes of C hinese
Peanut Butter , Soy Oriental ,
and Mala . The fun element lies in watching the chef chop up the ingredients and toss them before the guests’ eyes.
Teppanyaki Ice Cream Rarely seen at buffets, this live station showcases daily specials such as Piña Colada Ice Cream and Matcha with Azuki Beans and Mochi on top of customisable options.
Guests may choose from an array of confectionery essentials like chocolate sprinkles, marshmallows and cereal, that are then mixed together a la Teppanyaki style.

Live stations aside, the spread also features seafood on ice, selection of sashimi, popular * Stir Fried Slipper Lobster in Black Pepper Sauce, * Chilli Crab with Mantou , freshly made crackers and dips, along with lesser-seen dishes featuring Gimbap , Nanjing Salt Water Duck and Saigon Pancake . *Available for dinner only.
Ending things on a sweet note, the commendable local dessert selection features homemade Durian Pengat with Sticky Rice, DIY Mua Chee with Peanut and Black Sesame , Snow Pear and White Fungus with Red Dates and Goji Berries , Rum Ball , assorted Kuehs and Chempedak Cake . Made from scratch daily, these old school favourites are the perfect finish to a fulfilling meal. Diners may also have a go at being a bartender with the restaurant’s DIY Mocktail section.
Refreshed Modern Interior Boasting an entire new look complemented by sleek, light wood décor, the 300-seater restaurant spans 850 square feet of space that is conducive for celebrating special occasions, making it a go-to dining destination.
Charcoal Grill Street food in Asia and charcoal fire go hand in hand, whereby ingredients are grilled to achieve a delicious full flavour.
The heart of the restaurant is its custom-made charcoal grill used to cook meats together with claypot dishes. Interestingly, the kitchen team also adopts the Robatayaki style grilling for selected items.
Robatayaki (炉端焼き, literally "fireside-cooking") is a specialised Japanese grilling method often executed at varying speeds over hot charcoal.
Star dishes include Spice Brasserie’s rendition of Black Char Siew , slow cooked on the grill to achieve a sticky caramelised exterior, while remaining tender and juicy within, thanks to a secret recipe sauce concocted by the team.
Another must-try is the Broken Rice Claypot Porridge, a dish that is meticulously cooked in batches on the charcoal fire to produce a light umami broth that is then topped with a generous serving of white clams, barramundi and *oysters. *Available for dinner only.
A fun item to pick up is the homemade BBQ Carrot Cake that is served ‘potong’ style ice cream on a stick, for a touch of childhood nostalgia.
Surf and turf selections here compromises of SaltWater Grilled Barramundi, Barbecued Marinated Leg of Lamb and Crispy Roast Pork Belly Roll . In addition, the Spicy Cinnamon Honey Pineapple is grilled to perfection and a great accompaniment to one’s meal.
