Fall beckons with a breath-taking sight of nature evolving from verdant greenery to a panorama of orange, brown, and red hues. Fallen leaves adorn the land, permeating the air with the amazing scent of the earth.
It’s the season to rejoice, as this coveted time of the year hails a remarkable harvest of matured mushrooms and robust root vegetables as well as occasional late-summer fruits that grace the dining table with its rich aromas.
The highly anticipated autumn is well-loved by Chef Jeremy Gillon, and together with his team, Restaurant JAG pays gastronomic homage to the autumn produce from France, Japan, and Italy, with the découverte menu – La Balade du Végétal. An immersive repertoire showcasing the season’s harvest such as pumpkin, sweet potato, celeriac, salsify, Jerusalem artichoke, kohlrabi, mushrooms, chayote, chervil root, chestnut, banana shallot, cherry, parsley root, quince, and yacon.
The season’s harvest is presented in a 14-plate lunch experience ($228++per diner) and 17-plate dinner experience ($338++ per diner). This discovery journey is deftly orchestrated to display the quintessential flavours of the season – earthy, full-bodied, nutty, and buttery sweet. Each produce is intimately explored and presented in multiple textures and iterations.
The flavours are accentuated through the pairing of wild foraged herbs from the Alps of Savoie; completed with protein of the day sourced from hand-picked producers. The dishes are personalised around each diner’s dietary preference and inclination; embraced within the warm hospitality of the front of house team led by Anant.
