LeVeL33 runs its Weekender brunch every Saturday and Sunday, and it has been doing so long enough that regulars treat it as a standing appointment rather than an occasion. Good food, craft beer brewed on the premises, a view of Marina Bay that has not depreciated with familiarity. It is, by any honest accounting, one of the better ways to spend a weekend afternoon in this city.
This Father's Day from the 19 to 21 June it goes further a whole level further. Two sharing feasts built empathetically around what that table of three or four wants from a Sunday: serious seafood, a ribeye that means business, and cold craft beer poured straight from those guzzling tanks that your eyes can feast on.
The Feasts
Executive Chef Jake Kowalewski has spent years building what LeVeL33 calls its ContemBrewery kitchen where beer and its byproducts woven directly into the cooking, not as a novelty but as a genuine ingredient. Both Father's Day sharing options reflect that without making a production of it.
The Sharing Seafood Platter at $248++ for three to four guests starts with Kaluga A&K Caviar, Amur sturgeon hybrid, among the better caviars you will find at this price point in Singapore on the Housemade Beer Blini with Crème Fraîche. The blini is made in-house using LeVeL33's own brew. They taste like it.
A dozen freshly shucked oysters come with Wheat Beer Ponzu and Yarra Valley Salmon Roe; the ponzu is sharper and longer than lemon, the roe adds brine where the oyster is sweet. Ocean Trout Sashimi arrives with Nam Jim, Wakame and Pomelo. Poached Prawns with Housemade Smoked Cocktail Sauce close it out. Cold, abundant, well-composed.
Next up something hot and makes the whole room look over: the Charcoal and Wood-Grilled Australian Angus Ribeye on the Bone at $288++. Eight hundred grams, MBS 3+, over both charcoal and wood fire. The charcoal handles the crust; the wood gives it smoke. Alongside: Grilled Asparagus, Truffle Potato Purée, Heirloom Tomato Salad, and IPA and Honey Roasted Garlic.
This garlic is slow roasted until it collapses, the IPA's bitterness keeping the honey honest. That last detail is the tell. A kitchen that thinks about the garlic like that is paying attention across the whole plate.
On Sunday 21 June, every dad at the table drinks his first half-pint free. Further half-pints run at $6 throughout the day, which for craft beer brewed on-site by resident brewmaster Gabriel Garcia with100% organic hops and malt, ranging from a clean Blond Lager through Wheat Beer and IPA to rich Stouts and House Porters is worth it!
And I Say This With Some Standing More Details About My Own Experience
My most recent visit was the Carlitos x LeVeL33 Saturday brunch earlier this month a one-day-only four-hands between Chef Carlos Montobbio of Carlitos Casa de Comidas and Kowalewski. Spanish tapas culture against Marina Bay skyline, free flow for three hours, live Latin music keeping the room loose.
I want to be specific about the drinks, because this is where LeVeL33 quietly separates itself from every other venue in Singapore running a free-flow programme. I opened with an Aperol Spritz, moved to a cava that was dry and mineral, and finished the afternoon on an organic rosé the colour of a faded peony, tasting of strawberries and something cooler underneath. I was not measured about any of this. The free flow at LeVeL33 has a reputation among people who know it, and I treated it accordingly.
Sunday morning: nothing. No headache, no low-grade residual fog, none of the atmospheric consequences that follow a lesser afternoon. Organic hops, organic malt, wines sourced with actual thought behind them.
That is the version of day drinking worth making the case for, and LeVeL33 makes it consistently.
