Ivan Brehm Unveils Exciting New Menus at Appetite and Nouri, Inviting Guests on a Culinary Journey

Ivan Brehm, the creative power behind the one-Michelin-starred restaurants Nouri and Appetite, is bringing a new wave of culinary experiences to Singapore. Brehm unveils tempting new menus that promise to alter the way people congregate, drink, and celebrate.

Appetite, a one-of-a-kind fusion of a lounge, an intimate kitchen, and an art gallery, greets guests with an extensive à la carte menu. This pleasant location fosters socialising by serving a variety of appetisers, tapas, and small meals. The weekly menu highlights the culinary team's global perspective, fresh crops from partner farms, and Ivan Brehm's latest culinary innovations.

Fresh mussels from Port Douglas, Queensland, are bathed in a light white wine broth laced with Iranian saffron and served with house-made fried potato straws ($32++) under the Kitchen Specials area. Another standout is the tuna crudo ($30++), which comes with a spicy agua chilli and avocado relish. Appetite Classics such as the jiggly Hokkaido corn custard topped with Japanese uni, affectionately known as the Unicorn, remain a continuous joy for regulars ($38++).​​​​​​​

Due to the dynamic nature of Appetite's menu, prices of dishes may vary, delivering a different and fascinating gastronomic trip for every visit.

Appetite, which launched in 2020, represents Brehm's ideology of Crossroads Thinking—a celebration of people coming together to exchange ideas. The term "Appetite" is inspired by the Japanese word "paku paku taberu," which means "to gobble something up." The two-story space features a busy open kitchen and an attic that houses the Listening Lounge, which houses a collection of over 3,000 vinyl records—a one-of-a-kind experience for music fans.

The venue's ambience is enhanced by carefully curated artwork chosen by an in-house curatorial staff, presenting young and recognised artists from the region. An eclectic and producer-focused beverage list complements this immersive experience, providing a tremendous range of wines and sake that reflect the distinctive tale of their roots and creators.

Nouri

Nouri, located one level below Appetite, offers "Counter Culture," a four-course dinner experience for $168++. This one-of-a-kind gastronomic adventure, meant to be enjoyed at Nouri's renowned eating counter, builds on the success of the lunch menu presented earlier this year.

The meal pairs two dishes from Nouri's culinary menu with two seasonally inspired creations. Guests also receive two appetisers and a small variety of petit fours, offering a well-balanced and pleasurable dining experience.

The four-course dinner menu is available Wednesday through Sunday, with reservations only between 6:30 and 8:30 p.m.
