Singapore is a food destination with a vibrant and dynamic hawker culture. In celebration of the heritage food, IPPUDO is partnering with local hawkers and zi-char stall to showcase traditional hawker flavours to both its local and international patrons through its “A Global Edition: IPPUDO X SG Hawkers” campaign.

Taking six months to ideate and execute, this first-of-its-kind collaboration shines spotlights on truly local homegrown F&B businesses – Da Dong Prawn Noodles, Jin Ji Teochew Braised Duck & Kway Chap, and Keng Eng Kee (KEK) Seafood. Through their familiar and comforting dishes, each of the three brands has captured the hearts of Singaporeans. These stalls are currently run by second and third-generation owners, and each of their dishes is an iconic representation of Singapore’s cuisine.

The Hawker Heritage Set will feature three offerings with the main dish being The Hae Ramen, whose broth is a blend of Da Dong’s prawn soup and IPPUDO’s signature tonkotsu. Since 1966, Da Dong Prawn Noodles has been doling out piping hot bowls to customers. It is currently helmed by Watson Lim, a second-generation hawker who learnt the ropes and took over the reins from his father. Each sip is moreish — relish the umami note of prawns and the creaminess of the pork-bone soup.

Soaking up the broth are IPPUDO’s thin noodles, which are used in its signature Hakata-style ramen offerings. The overall dish is completed with prawns, deep-fried pork lard, beansprouts, fragrant fried garlic, chives and tamago. Enjoy the ramen two ways: savour the original taste of the soup broth, before adding a side serving of Li Nanxing’s Hae Bee Hiam paste.

The Hae Ramen is accompanied with two sides. The Lor Ark Bun comes with Jin Ji’s sliced braised duck — the delicious gravy coats the soft and pillowy buns. Jin Ji Teochew Braised Duck & Kway Chap was first incepted in 1980. It is currently owned by second-generation hawker Melvin Chew. Being keenly aware of the challenges that hawkers faced during the onset of the COVID-19 pandemic, Melvin was responsible for setting up Hawkers United FB Closed Group, which encouraged hawkers to go online.

The Kopi Chicken Karaage features IPPUDO’s Japanese-style fried chicken thigh that is coated with KEK Seafood’s bittersweet coffee sauce. The juicy and aromatic chicken is simply irresistible. KEK Seafood’s beginnings began humbly as a small hawker stall circa 1970s. Five decades later, the eatery is helmed by third-generation owners Liew siblings and is recommended in the MICHELIN Guide Singapore.
