Dragonfly, an impressive addition to Singapore’s cocktail scene, mixes art nouveau decor with a creative cocktail program, making its debut in June within the Vibe Hotel Singapore Orchard. This magnificent bar promises an exclusive refuge for late-night revelries, gourmet delights, and social gatherings.
Conceptualized by renowned bar designer Ashley Sutton, Dragonfly Singapore is the first foreign extension of Sutton’s acclaimed Hong Kong establishment. The design reflects the richness of the art nouveau style with its fascinating stained-glass dragonfly centerpiece and elaborate natural elements. The area is illuminated by hundreds of hand-blown lamps with wing designs, providing an ethereal teal glow evocative of Louis Comfort Tiffany’s famed work at Tiffany & Co.
The Singapore location differentiates itself by its professional personnel and a cocktail menu crafted under the expertise of Morgan Raelin Barron. Barron, a recognised figure in the bartending industry, brings her knowledge from esteemed bars such as Allegory and BarMini in the United States, where she mastered molecular mixology and supervised significant bar programs for the Kimpton Hotel group. Her involvement as a brand ambassador for famous labels like Bols Genever and Camus Cognac further underlines her significance in the business.
Barron’s move to Singapore saw her contribute to the cocktail programming at renowned venues including Jigger & Pony and 28 HongKong Street, and developing the offerings at Brasserie Astoria by Björn Frantzén. At Dragonfly, she oversees a team of skilled bartenders in designing a unique menu titled The Cause and Effect.
This menu addresses the cause-and-effect theory, with a progression from traditional cocktails to current, inventive compositions. Each segment of the menu is dedicated to a specific spirit category, starting with a classic cocktail and growing into innovative, avant-garde beverages, with careful attention to flavour evolution and balance.
The Cause and Effect menu includes a selection of expertly created cocktails. The Aperitif section includes Every Cloud (pictured above), a sweet and clear drink inspired by the Bamboo cocktail, combining mustard sherry, bianco vermouth, and honey. The Vodka section provides Bite the Blossom, a delicate highball with Hanami-infused vodka, Oloroso sherry, and bittersweet grapefruit.
Another standout is the spirit-forward High Mountain cocktail, which mixes Oolong vodka, St. Germain Elderflower Liqueur, and fortified vermouth with a delicate milk foam crisp. Gin aficionados will enjoy Veil of Fondness (pictured below), a sweet and nuanced blend of genever and clarified flavours, and Rose Stained, a lighter version of the Dry Martini.
Other notable offerings include The Right Chance, a fusion of classic cocktails with beetroot, and Everything Gets Butter, a sumptuous Old Fashioned prepared with brown butter-washed whisky. The menu also includes the Murphy's Law from the Rum area, a dessert cocktail that combines black rum with sweet corn ice cream and a splash of mala oil for a one-of-a-kind flavour experience.
