Enjoy an elegant selection of five savoury canapes specially created for the occasion. Indulge in Hokkaido scallops crisp served with salmon roe and fennel, as well as wagyu beef tartare served with confit quail egg and sumac. Delicate and smooth, the hand-chopped tartare enthrals the palate.
A luscious foie gras sandwich with marsala gel presents a marriage of umami flavours; rich and buttery foie gras is paired with the rounded touch of spice and sweetness from marsala gel.
The savoury morsels also include creamy buffalo ricotta cheesecake crowned with fresh shavings of black winter truffle and a refreshing Sicilian red prawn crudo complemented with the robust flavours of smoked avruga caviar and ponzu.
Leading the evening into a gastronomic close is a delectable trio of sweet treats. Begin with an enticing union of citrusy yuzu and rich dark chocolate bonbon, followed by nature’s own sweet treat of Japanese strawberry complemented with zesty limoncello jelly. Relish the bright flavours of Amalfi lemon and raspberry pavlova – the crisp meringue harbours a marshmallow texture and enchants the senses.
From Monday, 8 to Monday, 15 March, Terrace Lounge guests soaking in the panoramic city skyline between 6 pm to 10.30 pm will enjoy a complimentary pizza worth S$25++ with every bottle of wine purchased.
