Buona Terra ushers in the new year and the season of winter with a menu crafted with nature’s finest. Hand-picked by Resident Chef Denis Lucchi, impeccable winter ingredients such as crisp puntarelle, sweet and nutty salsify, nutrient-rich citruses and more, are artfully presented in contemporary Italian creations steeped in memory and fuelled by innovation.

Appreciate their flavours from now till March 2023 in Buona Terra’s set and Experience menus over lunch and dinner. Look forward to dishes such as the Scampi, featuring bincho-grilled Mozambique scampi overlaid with meltingly umami lardo, accompanied by sliced puntarelle rolled with Artigiana burrata.

In a perfect marriage, the scampi is matched with a rich winter ‘baugna cauda’ anchovy sauce. Delicate yet lavish, Rombo highlights brown butter poached French turbot and Sicilian red prawns enrobed in Swiss chard, crowned with Oscietra caviar, Liliput capers, and preserved Amalfi lemon. The dish is replete with a mugnaia sauce and parsley oil that effuses nutty and herbaceous notes.  

For lunch, enjoy the 4-Course Menu at $118 per person with two or three wine pairings at $58 and $88 each respectively.

Alternatively, opt for the Buona Terra Lunch Experience at 5 courses onwards from $178 per person. Pair your meal with a wine pairing from $168 per person.
