Pâtisserie CLÉ

Published - 03 April 2021, Saturday

Founded in 2018, Pâtisserie CLÉ (CLÉ is French for ‘key’) was created by local pastry chefs Germaine Li and Joy Chiam as a way to realise their approach to French desserts, where fresh produce and flavours are the means of invoking comfort and delight in equal measures.

Germaine and Joy first met as students at the internationally-renowned culinary institute Ferrandi Paris in 2016 to do their diploma in French pastry arts. During their course of study, Germaine worked at Patisserie Yann Couvreur. At the same time, Joy worked at the five-star luxury Hotel Le Burgundy where she worked with the pastry team to create desserts for the one-Michelin-star Restaurant Le Baudelaire and Le Charles cafe.

Back in Singapore, both continued their pastry careers in renowned restaurants. Germaine spent time at the now three-Michelin-star restaurant Les Amis while Joy worked at the three-Michelin-star Joël Robuchon Restaurant.

The zing of each tart at Patisserie Cle is mouth-watering and keeps you going for another bite till the tart is all gone. Yes, this has happened to us, which is why we order at least six of these delicious delights. Made with the freshest produce, the tarts here are bursting with decadence and fruity goodness. Relish seasonal berries with their Blueberry Rose, Mango, and Strawberry tarts. Their Lemon Meringue Tart and Bourdaloue Tart are perfect for those who love delicate flavours. And for those who love a little more decadence, should go for their Cognac Caramel Chocolate Tart.

Treat your sweet tooth to the exceptional pastries and tarts from a cosy little bakery, Pâtisserie CLÉ. Having acquired a new store recently, the sweet treats from this place are sure to win you over. We love their Mango Berry tart, topped with the freshest and generous amount of seasonal berries, and their whiskey chocolate cake, The Gentleman. It comes with layers of sponge soaked in whiskey and coated with dark chocolate and whiskey ganache. Their Pink Lady cake is not-to-be-missed. It is a vanilla bean bavarois with the flavours of rose and vodka-soaked lychees, fresh strawberries, and raspberries. Yum!
