Sundays at Le Pristine Singapore feel like a quiet celebration — the kind that unfolds slowly, with intention. There’s no chaos here, no jostling for attention. Just an artfully composed experience — elegant and refined, curated for those who appreciate the poetry of food done right.
Helmed by Chef Sergio Herman, whose Michelin-starred pedigree shows in every detail, Le Pristine’s new Sunday Brunch is not your typical buffet spread. It’s a curated journey of small plates — delicate compositions that balance restraint with creativity. The philosophy is clear: quality over excess, refinement over spectacle.
As we walk up the grand curved staircase into the cavernous bar leading further into the restaurant, the energy shifts from the bustle of the lobby to subtle elegance. The dramatically lit seafood bar at the entrance makes for a pretty picture, before we are led to our table with an envious view of the chef at work.
Here, each dish feels like a conversation between European sensibilities and Asian freshness. The Vitello Tonnato reimagines a classic with clean, silken flavours, while the Pumpkin Burrata offers comforting creaminess offset by gentle sweetness. The seafood bar gleams with hamachi, tuna, Irish Mor oysters, and a beautifully plated gambero rosso is lifted by the sparkle of finger lime.

My favourite, the Tuna Hamachi with radish petals, is delightfully citrusy and easily one of the best dishes at the seafood bar. The artisanal cheese selection is a thing of beauty. Instead of default options like Edam, Camembert or Roquerfort, the cheese picked for the brunch is unique and varied. Whether you prefer your cheese to be mild or strong, young or aged, pungent or floral, you are sure to discover a cheese you like.
Then come the warm plates, served on the table. Pizzette Marinara, Ravioli Ricotta Verbena, and a hearty fish soup — each one arriving with the kind of attention that makes you pause between bites. There’s a playfulness in the presentation, but the flavours remain confidently minimal — never overworked, always balanced.
Keep some space for dessert, as this is where Le Pristine Singapore truly shines. I, for one, could easily have eaten dessert for the entire meal, such is the brilliance of the pastry chef here. The Tiramisu is an obvious charmer, but it is the unassuming Madelines and Cannells that make me pause. With nothing to hide behind, these simple, bite-sized treats are baked perfectly, with slightly crispy edges and a moist crumb within.

Not to be overshadowed, the Dark Chocolate Tart holds its own and each decadent bite transports you a little closer to heaven. Children may not find comfort brunch favourites here, but they will be more than happy with the DIY Soft-serve Sundae Bar that reminds you not to take luxury too seriously.
Even the soundscape feels intentional. A curated DJ lineup by Eden YC provides a soundtrack that moves from soulful to hopeful — setting a rhythm that complements, never competes.
This isn’t your usual brunch. It’s for those who appreciate finesse, curation, and calm indulgence — for diners who understand that the art of eating lies as much in pacing as in flavour.
