National Day

From 23 to 29 August, as part of the hotel's Culinary Masters Series, Racines’ set lunch menu will feature the well-loved Da Dong Prawn Noodles as a main course. The second collaboration of the series, Watson Lim and his team of second-generation owners will satisfy palates with a recipe perfected by his father since 1966.

The deceptively simple prawn noodles is famed for its well-balanced broth and has received its stamp of approval from locals. Light yet flavourful, each mouthful of vermicelli is soaked in its sumptuous goodness alongside fresh tiger prawns. A generous sprinkling of crispy pork lard, spring onions and bean sprouts complete the dish.

Delicious must-tries are a luxed up Kaya Toast Set made with Foie Gras with Kaya Butter, Passion Fruit Aioli and Light Kopi Espuma, as well as Char Kway Teow featuring Wok-fried Flat Rice Noodles with Lobster, Cockles, Chinese Sausages and Bean Sprouts.

Dessert is a decadent affair with an indulgent Milo Tart by Executive Pastry Chef Sam Leong featuring Cocoa Shortcrust with Walnut Pralines, Milo Viennoise Sponge, Milomisu, Whipped Coffee Cream and Milo Ice Cream.
