From the moment we arrived, we were treated like special guests, escorted effortlessly to The Landing Point where we had reserved the special Chinese New Year High Tea - whilst our luggage made its separate way directly to our room. The Landing Point is a well loved address for afternoon tea amongst friends or family - and you can see why! The bridging point between the beautifully restored Clifford Pier and the hotel itself, The Landing Point frames the beauty of the marina beyond.
After the amazing food and drinks, we were shown to our room. Nothing can quite prepare you for walking into the Premier Bay View Room, with its floor to (high) ceiling windows that invite you to take in the view of the Marina Bay waterfront. You are immediately drawn to the ample sundeck and the twin sun loungers that promise a moment of pure relaxation. Check-in was completed here and was simple and efficient.
The room was sumptuous in its elegant design and choice of colours, and has everything at the touch of a button. The talking point is surely the view to the terrace from the luxurious bath. The perfect place for a glass of champagne and a moment to wonder at it all!
Pre-dinner drinks were at the Gin Parlour, strategically located at the marina end of Clifford Pier - with the backdrop of the tall skyscrapers as you are gently greeted by the warm evening breeze. Anthony, the Head Barman and Gin Mixologist, was welcoming and open to helping us choose the perfect Gin & Tonic for our al fresco moment watching the marina come to life as the evening wore on. I definitely recommend the Shiraz gin with the elderflower tonic!
Our focal point of the staycation was the promise of “Le Brunch By The Bay” at La Brasserie. Highly regarded by those in the know looking for a high quality brunch, Le Brunch has the advantage of being available on Saturdays as well as Sundays. A game changer for many.
La Brasserie is the epitome of French elegance. High ceilings, dramatic drapes, large windows, harmonious colours - everything you need to feel transported to somewhere really quite special. The team have cleverly separated areas so that you feel intimate on smaller tables and yet have space for larger groups.
The Fullerton Bay has come to excel at the newer style of brunch - served at the table. The food is as exquisite as the surroundings. The chefs serve produce of the highest quality in both classic and surprising formats. Whilst you take your time to peruse the tantalizing selections of food on offer and make your drinks selection, you receive a Welcome drink. A nice touch.
Le Brunch by the Bay offers a fairly wide choice of drinks packages to accompany your meal. With price points and alcohol levels for everyone. We chose the Champagne and wines selection - though we didn’t veer from the bubbles!
Our brunch started with a sharing platter entitled “Ocean Catch'' from the “Brunch Essentials” section - beautifully poached seafood and smoked salmon nestled on a bed of ice, with accompanying homemade sauces. For me, every brunch should start with seafood!
With a carefully curated selection of dishes in the Small Plates section, the Tureen options, the Cuisine Asiatique (locally inspired dishes) and the “Brunch Essentials” - there is a generous number of dishes to have “à volonté” (as much as you’d like). Hard to choose a favourite, but I would highly recommend the Chorizo Prawn dish.
Once you are ready for the main course, the fabulous serving team takes your order from the “Plats Principals”. We chose the “Meat Galore” sharing platter for two and were not disappointed! The melt in the mouth grilled Angus Côte de Boeuf was a pure delight. Superbly cooked and presented alongside the beef cheek, and accompanying vegetables.
The free-flow champagne is consistently topped up and some fabulous Bloody Marys are available too. All of this whilst you overlook the history of old Singapore and the new skyscrapers of the CBD. The juxtaposition of the old and new world presenting a perfect backdrop to this side of the hotel.
We finished our meal in an unhurried fashion with the divine chocolate mousse and Kirsch cherries as well as the Bourbon Creme Brulee. Both the perfect end to the perfect brunch.
And yet it wasn’t … because The Fullerton Bay Hotel offers a wonderful extension to the brunch experience!
The aptly named post-brunch “Tipples Under The Sky” is a wonderful chance to prolong the experience with your partner or friends. As you head up to the top floor of the hotel, the “Lantern” rooftop bar, framed by the infinity pool, welcomes you with its vista view of the sister hotel, the iconic Fullerton Hotel, and the whole of the bayfront. It’s low-rise enough for anyone who doesn’t like heights yet offers an enviable elevated view of the whole area. It is a perfect place to sit and watch the world - and the boats - go by.
The 2-hour free-flow package offers an afternoon of Prosecco, wine or a limited selection from the cocktail menu whilst seated on the comfy lounge chairs spread the width of the building. This is undoubtedly a hidden secret - because it is a perfect location for a lazy afternoon - being well looked after by Germalaine and her team. With surprising cocktails to try (The Peachberry Sling is a must!) you can easily slip from day to night without moving. If you start to feel those cocktail munchies coming, the Lantern offers bar snacks too.
Everything about our stay was first-class. The cleanliness, the service, the hospitality, the staff, the perfume! (Yes, The Fullerton Bay has its own scent - which you can purchase.) It is a defining, elegant perfume that is inviting yet comforting. This is intermingled effortlessly with the heritage that The Fullerton Bay Hotel is so proud to put on display. Everywhere you turn there are images of old Singapore. The Clifford Pier has been restored to more than its former glory. There are even free Heritage Tours - which are a must! The Fullerton Bay Hotel serves up just about everything you could ask for in a stay away from home.
Indeed, we left the hotel with just one wish - to return as soon as possible.
