What is Lunar New Year without Yu Sheng, the most iconic Lunar New Year tradition that brings friends, colleagues, and family together in a delicious ritual which signifies togetherness and bountiful blessings for the upcoming year?
The name Yu Sheng “鱼生” plays beautifully on the homophones of both “余” and “升”, which also means “increase in abundance”, therefore symbolising abundance and prosperity. Each ingredient represents different blessings and elements of health, luck, wealth, and happiness. When all the different elements are placed on the plate, diners gather to toss the ingredients and utter auspicious phrases. The higher the toss, the greater the fortune.
Din Tai Fung’s classic Prosperity Smoked Salmon Yu Sheng 发财鱼生 Classic S$48.80 (serves 4 to 6), Vegetarian S$39.80 (serves 4 to 6) comprises carefully selected ingredients. Flavourful Norwegian smoked salmon is served alongside colourful, and refreshing ribbons of carrots, and green and white radish. Ingredients also includes specially toasted, aromatic white sesame seeds and fragrant roasted peanuts.
This celebratory classic is drizzled with a swirl of Din Tai Fung’s in-house signature auspicious plum dressing that is delicately balanced with just the right perfect amount of sweetness; and topped with a serving of Crispy Yam Strips for an added crunch.
