Descaled and gutted sashimi-grade fish goes into the dry-ager, where the temperature and humidity levels are controlled, for a period of five to thirty days.

Savour the intense flavours and improved firmness of dry-aged fish in several simple ways such as eating the premium, sashimi-grade fish raw, or pan-seared lightly with fuss-free seasonings like salt and olive oil to bring out the authentic flavour and beautiful texture.

Customers can expect Dry Aged Ora King Salmon (from $12 per 100g) and Dry Aged Samegarei (from $12 per 100g) – the latter a flatfish also known as roughscale flounder.

To add to the fascinating and exclusive experience, customers are able to purchase Live Boston Lobster (from $40 per piece) and Live Alaskan King Crab (from $138 per 1kg) from customised open- top tanks that are positioned for easy viewing and selecting. The store is currently offering Live Boston Lobster at a special price of $30 with a minimum $50 spend at the store.

Bleu_A contemporary, comfortable and relaxed ambience

Decked in a beautiful mix of blue and white, the enticing space exudes a calm vibe that reflects the brand’s love for the ocean. Accentuating the inviting space is Bleu’s feature wall of a black-and-white, larger-than-life, graffiti artwork that celebrates ocean life.

The dry-ager that proudly displays quality dry-aged fish piques the curiosity of customers, along with chillers and freezers on both sides of the store, including one that is atop a classy blue marble counter. Not to be missed are the four customised tanks boasting live Boston lobsters and Alaskan king crabs.
