Japanese edomae sushi restaurant, Shoukouwa, continues to thrive amidst the pandemic, successfully retaining its two Michelin stars for the fifth consecutive year. The announcement at the Michelin Guide Singapore 2021 virtual awards ceremony continues to reaffirm Shoukouwa as Singapore’s first two-star sushi restaurant.
Home to the age-old tradition of Edomae sushi, Shoukouwa Sushi Restaurant is the epitome of culinary craftsmanship. Under the masterful hands of Head Chef Kazumine Nishida, the centuries-old sushi culture is elevated to world class standards, preserving the art of fine sushi that is contemplative and considered – like a zen expression.
Chef Nishida’s expertise is always grounded around his own life philosophy of ‘assume nothing, learn and practise everything’. Whilst being a keeper of time-honoured Japanese culinary traditions when it comes to sushi, Chef Nishida’s penchant for French and Chinese cuisine imbues in him an open mind for thoughtful experimentation with the cooked dishes and appetisers. As part of the Emmanuel Stroobant Group, which includes two Michelin-starred French restaurants, Saint Pierre, Chef Nishida works closely with Chef-Owner Emmanuel Stroobant to introduce western ingredients into Shoukouwa’s omakase menus, bringing Japanese cuisine to new heights.
Shoukouwa Sushi Restaurant is open for lunch on Tuesdays to Saturdays from 12.15pm to 3pm (last seating 1:30pm) and dinner on Tuesdays to Sundays at 6pm and 8.15pm to 10.30pm. Shoukouwa will be closed on Mondays.
