InterContinental Singapore is prepared to astonish and delight food fans with its first-ever Big Night Bazaar, an exciting complement to its legendary Big Brunch series.

On the evening of October 27, 2023, (Friday) from 6:30 PM to 10:00 PM, the hotel's Level 1 will turn into a lively international night market, presenting a one-night-only gastronomic experience.

A Global Street Food Feast

Prepare your taste buds for an incredible voyage as the Big Night Bazaar features an impressive range of 53 scrumptious foods from 16 nations. From the United States to Vietnam, this event captures the vivid essence of global street food culture, honouring the rich tapestry of foreign cuisine.

Among the delectable delights are:

  • Oven-Roasted U.S. Prime Beef with Cajun Spices (America): Savoury prime beef enriched with Cajun spices and served with roasted marble potatoes, jumbo green asparagus, and a luscious morel mushroom gravy.
  • Kurobuta Pork Knuckles (Germany): Enjoy precisely prepared, meaty pork knuckles with crispy skin, paired with zesty sauerkraut and a lovely potato salad.
  • Okonomiyaki (Japan): A savoury grilled pancake with tender cabbage, delicate Sakura Ebi, and bonito flakes for a rush of umami.
  • Yangnyeom-Chikin (Korea): Savour Korean Fried Chicken, a tantalising masterpiece with a crispy crust, tender flesh, spicy gochujang sauce, and sesame seeds.

  • Gua Bao (Taiwan): A soft, fluffy steamed bun filled with slow-braised pork belly and a variety of sauces.

  • Cold Cut Banh Mi (Vietnam): A Vietnamese-inspired treat with pork pâté, pickled veggies, cooked gammon and coriander in a crusty baguette.

But the culinary adventure does not end there! The Big Night Bazaar also has characteristic desserts from each of the 16 countries, such as Rum & Raisin Pecan Pie, Churros, LUCE's own LUCE-misu, Thai mango rice pudding and Glutinous Rice Ball in Osmanthus Sweet Soup.
