The Fullerton Hotel Singapore Showcases the Artistry of Jade with a Unique Exhibition

The Fullerton Hotel Singapore will host The Art of Jade exhibition, a one-of-a-kind celebration of artistic and culinary excellence headed by Chinese Executive Chef Leong Chee Yeng of the famed Jade restaurant. From early November to late November 2024, this spectacular event will feature over 50 ceramic masterpieces and 12 magnificent oil paintings produced by Chef Leong. Aside from celebrating culture, a portion of the exhibition's revenues will benefit the Autism Resource Centre (Singapore), demonstrating The Fullerton Hotel's commitment to cultural preservation and community assistance.

Chef Leong's transition from the kitchen to the art studio reflects his great passion for creativity, with clay and cuisine functioning as complementing modes of expression. Chef Leong, known for his creative ceramic centrepieces that adorn each table at Jade, sees a link between the fire that forms his ceramics and the flames that enhance his culinary creations.

Just as exact talent is required to create an outstanding dish, he puts the same emphasis and care into every ceramic piece he makes. Chef Leong's ceramic works, 88% of which are wood-fired, use an ancient technique that demonstrates patience and workmanship, mirroring the traits found in his Cantonese culinary creations. The remaining ceramic works, fired in an electric kiln, are a mix of classic and contemporary components, reflecting the chef's ability to combine old and new in both his art and cuisine.

However, the exhibition does not only feature pottery. It also houses a collection of oil paintings that provide insight into Chef Leong's emotions, recollections, and artistic viewpoints. Some of these works are influenced by textures and components from his kitchen, while others portray everyday scenes converted into bright expressions on paint.

Along with the Art of Jade exhibition, guests may enjoy a carefully crafted six-course tasting menu, Nostalgic Reflections, available at Jade. This menu, priced at SGD188 per person, is inspired by the iconic Fullerton Building and other adjacent sites. The Chinese word '陶回古早味,' which loosely translates to "recapturing classic flavours," is essential to the menu's theme and connects with the craftsmanship of ceramics, with '陶' representing clay.

Each meal is aimed to construct a narrative that combines Singapore's tradition with the fine elegance of culinary and ceramic expertise. Heritage in Stone is a standout dish, featuring braised excellent broth with crab meat, sea cucumber, and shredded chicken served in a stone pot. The stone pot is a symbolic tribute to the historic 'Singapore Stone' and the granite blocks that form the foundation of The Fullerton Hotel.
